Ingredients Serving: 4

  1. bhindi - 1 kg
  2. Mustard seeds - 3 to 4 tspn
  3. garlic - 6 to 8 pieces
  4. tomatoes - 2 small
  5. haldi - 1 tspn
  6. chilli powder - 1 tspn
  7. Dhaniya powder - 1 tspn
  8. oil for frying
  9. cumin seeds - 1/2 tspn
  10. Green Chillies - 2
  11. water
  12. salt

Instructions

  1. HEAT OIL, ADD BHINDI AND SAUTE
  2. SAUTE FOR 5 TO 10 MIN ON MEDIUM FLAME BY COVERING
  3. MEANWHILE ADD MUSTARD SEEDS AND GARLIC IN A MIXER
  4. AND GRIND TO FORM A PASTE, ADD LITTLE WATER
  5. THE CONSISTENCY SHOULD BE THICK, IF IT BECOMES RUNNY, ADD MORE WATER AND GARLIC AND GRIND AGAIN
  6. CHECK THE BHINDIS, ADD SALT AND MIX
  7. AFTER COOKING FOR 5 MIN MORE, KEEP THEM ASIDE
  8. NOW ADD DHANIYA POWDER, CHILLI POWDER, HALDI IN THE SARSO PASTE
  9. MIX THEM WELL
  10. HEAT OIL IN A KADHAI, ADD CUMIN SEEDS, GREEN CHILLIES
  11. AFTER THEY SPLUTTER, ADD THE SARSO PASTE
  12. AND KEEP ON STIRRING TO COKE THE MASALAS
  13. COOK TILL THE MASALA REDUCE IN QUANTITY AND CHANGE COLOR
  14. NOW ADD CHOPPED TOMATOES AND COOK
  15. ADD WATER AND MIX THE MASALAS
  16. ONCE IT COMES TO BOIL, ADD THE FRIED BHINDI
  17. MIX, COOK BY COVERING FOR 15 MIN ON MEDIUM FLAME
  18. CHECK IF THE WATER IS REDUCED, MIX AND SWITCH OFF THE FLAME
