Ingredients Serving: 4

  1. jeera Samba rice 2cups
  2. Ghee 4 tablespoons
  3. 3 onions sliced thin
  4. bay leaves 2
  5. cinnamon 2 inches
  6. Cloves 3 to 4
  7. green cardamom 3
  8. ginger garlic paste 1 tablespoon
  9. cashews 10
  10. Raisins 2 tablespoons
  11. salt accordingly
  12. coriander leaves for garnishing

Instructions

  1. WASH AND SOAK 2 CUPS JEERA SAMBA RICE
  2. CUT 2-3 ONIONS INTO THIN SLICES
  3. TAKE BAY LEAVES,CINNAMON,CARDAMOM, STAR ANISE, GINGERGARLIC PASTE, CASHEWS,RAISINS
  4. HEAT 2 TABLESPOONS GHEE IN A PRESSURE COOKER
  5. ADD THE WHOLE GARAM MASALA
  6. ADD HALF OF THE SLICED ONIONS
  7. SAUTE WELL IN MEDIUM FLAME
  8. MEANWHILE HEAT 1 TABLESPOON OF GHEE IN A KADAI
  9. ADD THE REMAINING ONIONS
  10. SAUTE WELL AND LET IT GET FRIED IN LOW FLAME
  11. NOW ADD 1 TABLESPOON OF GINGER GARLIC PASTE TO THE ONION IN PRESSURE COOKER AND SAUTE WELL
  12. NOW ADD THE SOAKED AND DRAINED RICE
  13. MIX WELL AND FRY FOR A MINUTE
  14. ADD 3.5 CUPS OF WATER
  15. THE ONIONS ARE ROASTED WELL.DRAIN THEM.
  16. ADD CASHEWS TO THE SAME GHEE
  17. ROAST THEM
  18. ADD ADEQUATE SALT TO THE RICE
  19. PRESSURE COOK FOR 4 WHISTLES
  20. ROAST CASHEWS TO GOLDEN BROWN COLOUR
  21. ADD RAISINS TO THE GHEE
  22. DRAIN THEM
  23. COOL THE FRIED ONIONS,CASHEWS AND RAISINS
  24. OPEN THE COOKER ONCE PRESSURE IS RELEASED NATURALLY
  25. ADD THE FRIED ONIONS,CASHEWS AND RAISINS AND MIX GENTLY
  26. GARNISH WITH CORIANDER LEAVES
  27. MALABAR GHEE RICE/NEI CHORU IS READY . I HAVE SERVED IT WITH MUTTON MASALA
