Ingredients Serving: 4

  1. For rice :
  2. 1 cup long grained rice (wash and soaked)
  3. 2tbsp olive oil/ coconut oil
  4. 2tbsp chopped garlic
  5. 1/4 cup diced red capsicum
  6. 1/5 cup chopped broccoli
  7. 1/2 cup chopped kale leaves
  8. 1/2 cup diced avocado
  9. 3/4 spring onion thinly sliced
  10. Salt
  11. 1tsp paprika powder
  12. 1tsp cumin powder
  13. 1 1/2 cup of thin/diluted coconut milk
  14. 1/2 cup coconut cream
  15. For Drumsticks :
  16. 4 drumsticks cleaned
  17. For the rub
  18. 1tbsp soy sauce
  19. 2tbsp lemon juice
  20. 2tsp garlic paste
  21. 1tsp ginger paste
  22. Salt
  23. 1tbsp dried herbs
  24. 1-2 sprigs of rosemary well pounded
  25. 1tsp paprika powder
  26. For sticky sauce :
  27. 2tsp soy sauce
  28. 2tsp red chilli sauce
  29. 1/2 tbsp honey
  30. 1/8tsp fish sauce
  31. 1/2tsp vinegar
  32. Oil for frying
  33. White sesame seeds 1tbsp

Instructions

  1. SUPERFICIALLY SLIT THE DRUMSTICKS
  2. PUT ALL THE INGREDIENTS FOR THE RUB IN A MIXING BOWL AND MIX WELL
  3. APPLY THE RUB TO THE DRUMSTICKS AND MASSAGE THEM THOROUGHLY FOR A MINUTE. COVER AND LET IT REST FOR 30 MINUTES.
  4. IN A HOT WOK PUT OIL AND ADD CHOPPED GARLIC TO IT
  5. COOK TILL GOLDEN . NOW ADD CHOPPED BROCCOLI AND RED CAPSICUM TO IT. CONTINUE STIRRING
  6. AFTER 2-3 MINUTES OF COOKING ON HIGH FLAME ADD IN CHOPPED AVOCADO AND KALE LEAVES . CONTINUE TO STIR ON HIGH FLAME FOR 3-4 MINUTES
  7. YOU MAY NOW ADD CHOPPED SPRING ONION, PAPRIKA POWDER, SALT AND CUMIN POWDER
  8. SLOW DOWN THE FLAME AND COOK FOR ANOTHER COUPLE OF MINUTES
  9. NOW POUR THIN COCONUT MILK AND KEEP STIRRING CONTINOUSLY UNTIL IT COMES TO BOIL
  10. AS SOON AS THE MIXTURE COMES TO BOIL ADD IN SOAKED WND DRAINED RICE
  11. ADD THICK COCONUT CREAM AT THIS POINT AND SLOW DOWN THE FLAME.
  12. LET IT COOK ON SIMMER UNTIL DONE
  13. IN A NONSTICK PAN POUR OIL AND GENTLY STEEP IN THE DRUMSTICKS
  14. AFTER 5 MINUTES GENTLY FLIP OVER THE DRUMSTICKS WITH HELP OF TONGS
  15. ONCE THE DRUMSTICKS ARE THOROUGHLY COOKED POUR THE PREPARED STICKY SAUCE AND COAT WELL
  16. SPRINKLE SESAME SEEDS WHEN READY TO SERVE
