Ingredients Serving: 4

  1. small sized brinjals 10 to 15
  2. shallots 100 grams
  3. garlic 6-8 pods
  4. tomato 1
  5. curry leaves few
  6. tamarind lemon sized
  7. gingelly oil 30 ml
  8. thick coconut milk half cup(optional)
  9. Sambar Powder 2 teaspoons
  10. turmeric powder half teaspoon
  11. salt accordingly
  12. jaggery a small bit

Instructions

  1. PICK 10-15 SMALL SIZED BRINJALS
  2. SLIT THE BRINJAL FROM BOTTOM RETAINING THE CROWN AND CHECK FOR WORM. IMMERSE IN WATER TILL COOKING
  3. CHOP SHALLOTS AND GARLIC
  4. SOAK LEMON SIZE TAMARIND
  5. HEAT 2 TABLESPOONS OF GINGELLY OIL IN A HANDI
  6. ADD THE BRINJALS
  7. FRY THEM IN MEDIUM FLAME
  8. ADD 1 TEASPOON SALT
  9. ADD 1/2 TEASPOON TURMERIC POWDER
  10. ADD 1 TEASPOON SAMBAR POWDER
  11. SAUTE WELL
  12. COOK TILL BRINJALS ARE FRIED WELL AND TURNS BROWN
  13. REMOVE AND SET ASIDE
  14. IN THE SAME KADAI ADD CHOPPED SHALLOTS AND GARLIC
  15. ADD 1 CHOPPED TOMATO
  16. SAUTE WELL
  17. ADD SALT AND TURMERIC POWDER AND SAUTE WELL
  18. ADD 1 TEASPOON SAMBAR POWDER
  19. NOW ADD THE TAMARIND EXTRACT
  20. AFTER IT STARTS BOILING ADD A SMALL PIECE OF JAGGERY
  21. ADD THE FRIED BRINJALS AND COOK COVERED FOR 10 MINUTES
  22. THE OIL STARTS FLOATING AND ADD 1/2 CUP THICK COCONUT MILK(OPTIONAL)
  23. AFTER A MINUTE GARNISH WITH CURRY LEAVES AND FRIED BRINJAL CURRY IS READY TO BE SERVED WITH RICE
