This is a delicious and very different dish from Bihar.Littis are somewhat similar to baati but with sattu filling inside.Typically served with baingan,aloo and tamatar ka chokha.

For litti:
Wheat flour 2 cups
Ghee 1/4 cup
Carom seeds 1 tsp
Salt 1 tsp
For stuffing:
Sattu 1 cup
Pickle masala 1 tbsp
Black salt 1/2 tsp
Salt to taste
Lemon juice 1 tsp
Grated ginger 1 tsp
Chopped green chilli 1
Turmeric 1/2 tsp
Red chilli powder 1 tsp
coriander powder 1 tsp
Mustard oil 2 tsp
Green coriander 2 tsp
For baingan ka chokha:
Brinjals 2 small/1 big
Chopped onions 2 tbsp
Mustard oil 1 tsp
Salt to taste
Green chilli 1
For aloo ka chokha:
Boiled potatoes 3 medium
Chopped onions 2 tbsp
Salt to taste
Lemon juice 1 tsp
Green chilli 1
Coriander 2 tsp
Mustard oil 1 tsp
For tamatar chokha:
Tomatoes 3
Salt to taste
Green chilli 1
Coriander 2 tsp
Mustard oil 1 tsp
Instructions
TAKE 2 CUPS WHEAT FLOUR IN A BIG BOWL.ADD 1 TSP SALT,1 TSP CAROM SEEDS.ADD 1/4 CUP GHEE AND A PINCH OF BAKING SODA.
MIX WELL SUCH THAT CRUMBS ARE FORMED.
ADD WATER AS REQUIRED AND KNEAD A MEDIUM DOUGH JUST LIKE PARATHAS.
COVER THE DOUGH AND KEEP ASIDE FOR 15 MINUTES.
FOR STUFFING WE NEED 1 CUP SATTU,2 TSP MUSTARD OIL,1 GREEN CHILLI,2 TSP CORIANDER,1 TBSP PICKLE MASALA,SALT,1/2 TSP BLACK SALT,1/4 TSP TURMERIC,1 TSP CHILLI POWDER,1 TSP CORIANDER POWDER AND 1 TSP LEMON JUICE.
ADD ALL INGREDIENTS FOR STUFFING ONE BY ONE AND MIX WELL.
OUR STUFFING IS READY,IT SHOULD NOT BE VERY DRY.
NOW KNEAD THE DOUGH ONCE AGAIN AND TAKE A SMALL BALL FROM IT.
MAKE A DEEP BOWL WITH THE HELP OF FINGERS.
FILL A TBSP OR MORE OF STUFFING.
NOW CLOSE ALL EDGES TO FORM A CLOSED BALL AGAIN.
MAKE A SMOOTH BALL.
KEEP ALL PREPARED LITTIS IN GAS TANDOOR OR OVEN TO BAKE TILL THEY TURN BROWN FROM BOTH SIDES.
LET'S ROAST BRINJAL FOR CHOKHA.CUT LONGITUDINALLY AND CHECK INSIDE BEFORE ROASTING.
ROAST TOMATOES ALSO.
PEEL THE ROASTED BRINJALS AND MASH WELL.
ADD 2 TBSP OF FINELY CHOPPED ONIONS AND SALT AS PER TASTE.
ADD FINELY CHOPPED GREEN CHILLIES,CORIANDER AND 1 TSP MUSTARD OIL.
MIX WELL AND OUR BAINGAN KA CHOKHA IS READY.
NOW TAKE PEELED ROASTED TOMATOES AND MASH NICELY.
ADD CHOPPED GREEN CHILLIES,CORIANDER,SALT.
ADD 1 TSP MUSTARD OIL AND OUR TOMATO CHOKHA IS ALSO READY.
