ABOUT Litti chokha RECIPE

This is a delicious and very different dish from Bihar.Littis are somewhat similar to baati but with sattu filling inside.Typically served with baingan,aloo and tamatar ka chokha.

Ingredients Serving: 4

  1. For litti:
  2. Wheat flour 2 cups
  3. Ghee 1/4 cup
  4. Carom seeds 1 tsp
  5. Salt 1 tsp
  6. For stuffing:
  7. Sattu 1 cup
  8. Pickle masala 1 tbsp
  9. Black salt 1/2 tsp
  10. Salt to taste
  11. Lemon juice 1 tsp
  12. Grated ginger 1 tsp
  13. Chopped green chilli 1
  14. Turmeric 1/2 tsp
  15. Red chilli powder 1 tsp
  16. coriander powder 1 tsp
  17. Mustard oil 2 tsp
  18. Green coriander 2 tsp
  19. For baingan ka chokha:
  20. Brinjals 2 small/1 big
  21. Chopped onions 2 tbsp
  22. Mustard oil 1 tsp
  23. Salt to taste
  24. Green chilli 1
  25. For aloo ka chokha:
  26. Boiled potatoes 3 medium
  27. Chopped onions 2 tbsp
  28. Salt to taste
  29. Lemon juice 1 tsp
  30. Green chilli 1
  31. Coriander 2 tsp
  32. Mustard oil 1 tsp
  33. For tamatar chokha:
  34. Tomatoes 3
  35. Salt to taste
  36. Green chilli 1
  37. Coriander 2 tsp
  38. Mustard oil 1 tsp

Instructions

  1. TAKE 2 CUPS WHEAT FLOUR IN A BIG BOWL.ADD 1 TSP SALT,1 TSP CAROM SEEDS.ADD 1/4 CUP GHEE AND A PINCH OF BAKING SODA.
  2. MIX WELL SUCH THAT CRUMBS ARE FORMED.
  3. ADD WATER AS REQUIRED AND KNEAD A MEDIUM DOUGH JUST LIKE PARATHAS.
  4. COVER THE DOUGH AND KEEP ASIDE FOR 15 MINUTES.
  5. FOR STUFFING WE NEED 1 CUP SATTU,2 TSP MUSTARD OIL,1 GREEN CHILLI,2 TSP CORIANDER,1 TBSP PICKLE MASALA,SALT,1/2 TSP BLACK SALT,1/4 TSP TURMERIC,1 TSP CHILLI POWDER,1 TSP CORIANDER POWDER AND 1 TSP LEMON JUICE.
  6. ADD ALL INGREDIENTS FOR STUFFING ONE BY ONE AND MIX WELL.
  7. OUR STUFFING IS READY,IT SHOULD NOT BE VERY DRY.
  8. NOW KNEAD THE DOUGH ONCE AGAIN AND TAKE A SMALL BALL FROM IT.
  9. MAKE A DEEP BOWL WITH THE HELP OF FINGERS.
  10. FILL A TBSP OR MORE OF STUFFING.
  11. NOW CLOSE ALL EDGES TO FORM A CLOSED BALL AGAIN.
  12. MAKE A SMOOTH BALL.
  13. KEEP ALL PREPARED LITTIS IN GAS TANDOOR OR OVEN TO BAKE TILL THEY TURN BROWN FROM BOTH SIDES.
  14. LET'S ROAST BRINJAL FOR CHOKHA.CUT LONGITUDINALLY AND CHECK INSIDE BEFORE ROASTING.
  15. ROAST TOMATOES ALSO.
  16. PEEL THE ROASTED BRINJALS AND MASH WELL.
  17. ADD 2 TBSP OF FINELY CHOPPED ONIONS AND SALT AS PER TASTE.
  18. ADD FINELY CHOPPED GREEN CHILLIES,CORIANDER AND 1 TSP MUSTARD OIL.
  19. MIX WELL AND OUR BAINGAN KA CHOKHA IS READY.
  20. NOW TAKE PEELED ROASTED TOMATOES AND MASH NICELY.
  21. ADD CHOPPED GREEN CHILLIES,CORIANDER,SALT.
  22. ADD 1 TSP MUSTARD OIL AND OUR TOMATO CHOKHA IS ALSO READY.
  23. DON'T FORGET TO TURN THE LITTIS IN BETWEEN.
  24. NOW TAKE 3 BOILED POTATOES AND MASH THEM WELL.
  25. ADD SALT,GREEN CHILLIES,CORIANDER,1 TSP LEMON JUICE,2 TBSP ONIONS AND 1 TSP MUSTARD OIL.
  26. MIX WELL AND OUR ALOO KA CHOKHA IS ALSO READY.
