Ingredients Serving: 3

  1. 1 brinjal large size
  2. 2 boiled and mashed potato
  3. 6 to 8 garlic, 4 to 6 garlic more for tempting
  4. 1 tsp cumin seeds
  5. 2 onion chopped
  6. 1 kashmiri mirch chopped
  7. 1 tbsp roast and crushed corriender seeds
  8. 2 nicely chopped green chilli
  9. 2 chopped tomato
  10. 1 tsp red chilli powder
  11. 6 to 8 crushed cashew
  12. 10 to 12 raisins
  13. salt as per taste
  14. Few saffron strings dissolve in 1 tbsp milk
  15. 1/2 cup fresh malai
  16. Fresh chopped corriender
  17. 2 tbsp cooking oil

Instructions

  1. IN A MEDIUM SIZE BRINJAL MAKE 6 TO 8 CUTS AND INSERT THE GARLIC AND GREASE WITH OIL
  2. NOW ROAST THE BRINZAL ON DIRECT HEAT
  3. WHEN ROAST DIP IN COLD WATER
  4. WHEN COOL REMOVE THE BURN SKIN
  5. AND CHOPPED IT
  6. NOW HEAT 2 TBSP OIL IN A PAN ADD 1 TSP CUMIN SEEDS
  7. 2 CHOPPED ONION
  8. AND FRY IT
  9. ADD 4 TO 6 WHOLE GARLIC CLOVES
  10. 1 KASHMIRI MIRCH CHOPPED
  11. 1 TBSP ROAST AND CRUSHED WHOLE CORRIENDER SEEDS AND 2 NICELY CHOPPED GREEN CHILLI
  12. 2 CHOPPED TOMATO
  13. 1 TSP RED CHILLI POWDER
  14. 1 TSP SALT OR AS PER TASTE
  15. NOW ADD 6 TO 8 CRUSHED CASHEW
  16. 10 TO 12 RAISINS
  17. ADD ROAST AND CHOPPED BRINJAL
  18. 2 BOILED AND MASHED POTATO
  19. NOW MIX WELL
  20. ADD SAFFRON MILK
  21. 1/2 CUP FRESH MALAI
  22. NOW MIX ALL
  23. ADD 1/2 TSP BLACK PEPPER POWDER
  24. 1/2 TSP ROASTED CUMIN POWDER AND 10 TO 12 DRY MINT LEAVES
  25. NOW MIX ALL NICELY
  26. FINALLY ADD FRESH CHOPPED CORRIENDER AND MIX WELL
  27. NOW SHAHI BAIGAN BHARTA IS READY TO SERVE
