Ingredients Serving: 4

  1. 300 gram small size brinjal
  2. 200 gram brinjal size potato
  3. 1 tsp cumin seeds
  4. 1 tbsp corriender seeds
  5. 6 to 8 white pepper corn
  6. 10 to 12 black pepper corn
  7. 1 tsp fennel seeds
  8. 1 tsp fenugreek seeds
  9. 1 tsp crushed mustard seeds
  10. 1 tbsp dry coconut powder
  11. 1 tbsp roasted chana dal
  12. 1 tbsp sesame seeds
  13. 1 tbsp red chilli powder
  14. 1 tsp turmeric powder
  15. 1 tsp dry mango powder
  16. 1 tsp ginger powder
  17. 1-1 nicely chopped onion
  18. 6 to 8 nicely chopped garlic
  19. 1 tbsp chopped fresh corriender
  20. salt as according to taste
  21. 1 and 2 tbsp mustard oil
  22. 1 tsp lemon juice
  23. Some fresh chopped corriender for mix and for garnish

Instructions

  1. TAKE 300 GRAM SMALL SIZE BRINJAL AND MAKE CUTS IN BETWEEN FOR STUFFING
  2. AND TAKE 200 GRAM BRINJAL SIZE POTATO AND MAKE CUTS FOR STUFFING
  3. PREPARE ALL POTATO AND BRINJAL
  4. NOW TAKE 1 TSP CUMIN SEEDS IN A PAN
  5. 1 TBSP CORRIENDER SEEDS
  6. 6 TO 8 WHITE PEPPER CORN
  7. 10 TO 12 BLACK PEPPER CORN
  8. 1 TSP FENNEL SEEDS
  9. 1 TSP FANUGREEK SEEDS
  10. 1 TSP CRUSHED MUSTARD SEEDS
  11. 1 TBSP DRY COCONUT POWDER
  12. 1 TBSP ROASTED CHANA DAL
  13. 1 TBSP SESAME SEEDS
  14. NOW ROAST ALL WELL ON LOW FLAME
  15. WHEN DONE TRANSFER IN GRINDING JAR
  16. TO MAKE POWDER
  17. WHEN DONE TRANSFER IN A PLATE
  18. ADD 1 TBSP RED CHILLI POWDER
  19. 1 TSP TURMERIC POWDER
  20. ADD SALT ACCORDING TO TASTE
  21. 1 TSP DRY MANGO POWDER
  22. 1 TSP DRY GINGER POWDER
  23. 1 CHOPPED ONION
  24. 6 TO 8 CHOPPED GARLIC
  25. 1 TBSP FRESH CHOPPED CORRIENDER
  26. AND FINALLY ADD 1 TBSP MUSTARD OIL
  27. MIX ALL NICELY
  28. NOW FILL THE STUFFING IN THE BRINJAL
  29. AND IN POTATO
  30. STUFFED ALL VEGETABLES AND RESERVE SOME STUFFING FOR NEXT STEP
  31. NOW HEAT 2 TBSP MUSTARD OIL IN A PAN
  32. WHEN DONE ADD 1 CHOPPED ONION
  33. AND SAUTE
  34. WHEN ONION BROWN IN COLOUR ADD STUFFED BRINJAL AND POTATO
  35. STIR IT
  36. NOW CLOSE THE LID TO COOK
  37. STIR IN BETWEEN
  38. WHEN IT'S 80% COOK ADD RESERVE MASALA , MIX WELL AND AGAIN COOK TILL COMPLETELY DONE
  39. WHEN DONE SWITCH OF GAS AND ADD 1 TSP LEMON JUICE AND FRESH CHOPPED CORRIENDER
  40. MIX WELL
  41. SPRINKLE SOME CHOPPED CORRIENDER FOR GARNISH, NOW STUFFED BRINJAL AND POTATO ARE READY TO SERVE
