ABOUT Vegetables Yakhni Pulao RECIPE

Traditionaly yakhni pulao made with mutton but here is twist and i make it with vegetables. Really it's so tasty and yummy and perfect recipe for lunch time.

Ingredients Serving: 4

  1. 1 bowl soaked basmati rice
  2. 1 bowl mix vegetables cut in chunks (capsicum, carrot and cauli flower and some green peas)
  3. For Yakhni Potli, 1 tsp fennel seeds
  4. 1 tsp cumin seeds
  5. 1 tsp corriender seeds
  6. 6 to 8 garlic cloves
  7. 1 inch ginger cut in pieses
  8. Other ingredients for yakhni, 1 bay leaf
  9. 1 cinnamon stick
  10. 1 star anise
  11. 1 black cardamom
  12. 2 green cardamom
  13. 8 black pepper corn
  14. 3 strings mace
  15. 4 cloves
  16. 1 tsp salt or as per taste
  17. For tempting, 1 tsp cumin seeds
  18. 1 tsp shahi jeera
  19. 1 bay leaf
  20. 1 cinnamon stick
  21. 1 big size onion cut in julien
  22. 1 tsp ginger paste
  23. 1 tsp garlic paste
  24. 1/2 cup curd
  25. 3 green chillies cut in half
  26. 1 kashmiri chilli cut in 3 to 4 pieses
  27. 1 tsp fennel powder
  28. 1/2 tsp black pepper powder
  29. 1 cup milk
  30. 2 tbsp desi ghee
  31. Adjust salt according to taste
  32. Fresh chopped corriender

Instructions

  1. 1 BOWL MIX VEGETABLES CUT IN CHUNKS(CARROT, CAULIFLOWER AND CAPSICUM) ADD SOME GREEN PEAS
  2. TO MAKE YAKHANI POTLI, IN MUSLIN CLOTH, TAKE 1 TSP FENNEL SEEDS
  3. 1 TSP CUMIN SEEDS
  4. 1 TSP CORRIENDER SEEDS
  5. 6 TO 8 GARLIC CLOVES
  6. 1 INCH GINGER CUT IN PIESES
  7. TIE IT MAKE A POTLI LIKE THIS
  8. 1 BAY LEAF,1 CINNAMON, 2GREEN AND 1 BLACK CARDAMOM,1STAR ANISE, 4 CLOVES 3 STRING MACE,8 BLACK PEPER
  9. TAKE SOME WATER IN A POT ADD YAKHNI WHOLE GARAM MASALA
  10. ADD PREPARED POTLI
  11. 1 TSP SALT
  12. NOW ADD VEGETABLES
  13. MIX WELL, COVER IT AND WAIT TO HALF COOK
  14. WHEN HALF COOK KEEP ASIDE
  15. REMOVE POTLI FROM THIS
  16. TAKE 1 TSP CUMIN AND 1 TSP SHAHI JEERA,1 BAY LEAF AND 1 CINNAMON STICK
  17. HEAT 2 TBSP DESI GHEE IN COOKING POT, ADD CUMIN, SHAHI JEERA, BAY LEAF AND CINNAMON
  18. NOW ADD 1 BIG SIZE ONION JULIEN WAIT TO LIGHT BROWN IN COLOUR
  19. WHEN DONE KEEP OUT SOME STRINGS FOR LAST STEP
  20. NOW ADD 1 TSP GINGER AND 1 TSP GARLIC PASTE
  21. SAUTE IT
  22. ADD 1/2 CUP CURD
  23. MIX IT
  24. NOW ADD CAPSICUM CHUNKS
  25. 3 GREEN CHILLIES CUT IN HALF AND 1 KASHMIRI MIRCH CUT IN 3 TO 4 PIESES
  26. NOW MIX ALL
  27. ADD 1 TSP FENNEL POWDER
  28. 1/2 TSP BLACK PEPPER POWDER
  29. NOW ADD 1 BOWL SOAKED BASMATI RICE
  30. STIR IT
  31. NOW ADD HALF COOK VEGETABLES YAKHNI MASALA
  32. ADD SALT TO TASTE AND MIX WELL
  33. ADD SOME WATER
  34. AND 1 CUP MILK
  35. WAIT FOR BOIL NOW COVER IT FOR COOK RICE ON LOW FLAME
  36. WHEN DONE MIX LIGHTLY
  37. NOW ADD CARAMALIZED ONION AND CHOPPED CORRIENDER OVER THE TOP
  38. NOW VEGETABLES YAKHNI PULAO IS READY TO SERVE
  39. TRANSFER IN SERVING PLATE GARNISH WITH ONION AND CORRIENDER NOW VEGETABLE YAKHNI PULAO IS READY
