Ingredients Serving: 4

  1. Basmati rice 3 cups soaked , drained and 90%cooked ( 3 cloves , 1 tablespoon ghee , half salt , water 2.5 cups added to cook )
  2. Hard boiled eggs 3-4 tossed in ghee and halved
  3. oil 5 tablespoons
  4. ghee 2 tablespoons
  5. Bay leaves 3
  6. Black cardamom 3
  7. cinnamon stick medium 1
  8. cloves 5
  9. Black pepper 8
  10. cumin 1 teaspoon
  11. Star anise 4
  12. nutmeg powder 1 teaspoon
  13. ginger garlic paste 1 tablespoon
  14. onions 3 big thinly sliced
  15. tomatoes 1 big chopped
  16. green chillies 3
  17. salt 1 teaspoon ( salt is added in rice so balance )
  18. cilantros bunch chopped
  19. turmeric powder 1 teaspoon
  20. coriander powder 3/4 teaspoon
  21. Garam masala powder 1 tablespoon
  22. saffron infused warm water 1/4 cup
  23. Orange food colour powder 1/4 teaspoon
  24. mint leaves 1/2 cup
  25. yogurt 3 tablespoons

Instructions

  1. Heat 5 tablespoons oil, 2tablespoons ghee in a wide pan.Add 3 bay leaves,4 star anise,1 teaspoon
  2. cumin,8pepper,5cloves,3 black cardamoms, 1medium cinnamon stick, 3 big onions sliced. Sauté onions
  3. till brown . Add 1 tablespoon ginger garlic paste, 3 green chillies. Add 1 big tomato chopped .
  4. Sauté tomatoes till mushy, glossy. Add 1 teaspoon nutmeg powder.
  5. Add 1 teaspoon turmeric powder, 1 tablespoon garam masala powder, 3/4 teaspoon coriander powder,salt
  6. Add bunch chopped cilantros , mint,3tablespoons yogurt . Stir and cook till oil oozes from masala.
  7. Halve 3 boiled eggs , toss it in ghee and add to the masala . Mix and coat eggs with Masala .
  8. Take 3 cups 90%cooked basmati rice.Cook rice adding 1 tablespoon ghee,3 cloves,salt,2.5 cups water.
  9. Now spread the cooked rice on the masala eggs . Sprinkle orange colour here and there . Pour 1/4
  10. Cup warm saffron water. Cover the pan . Dum cook for 10 minutes in low heat .
  11. Bring up the masala layer up . Gently mix . Fluffy Egg biryani is ready . Pan cooked yum Biryani .
  12. Serve hot .
