ABOUT Chholar dal luchi RECIPE

It's a popular traditional bengali breakfast. Chholar dal or chana dal and luchi means puries made of all purpose flower. You can mix whole wheet flower also with maida. But I like this one.

Ingredients Serving: 4

  1. For dal: Chana dal (bengal gram) 1 cup
  2. Termaric powder 1 teaspoon, salt as required
  3. Sugar 1 teaspoon, cumin powder 1/2 teaspoon,
  4. cumin seeds 1/2 teaspoon
  5. Bay leaf 1, Whole Red cilli 1,
  6. Greted ginger 1 teaspoon
  7. cardamom pod cinnamon and clove
  8. coconut sliced 1 table spoon
  9. Green 2 teaspoon
  10. For luchi: All purpose flour 3cups
  11. Salt,water
  12. Vegetable oil for deep frying and 2 table spoon for moyan

Instructions

  1. TAKE WASHED CHANA DAL (BENGAL GRAM)
  2. ADD WATER
  3. ADD TERMARIC POWDER
  4. PRESSURE COOK
  5. ALL PURPOSE FLOUR ADD SALT
  6. ADD OIL FOR MOYAN
  7. MIX
  8. ADD WATER AND MAKE THE DOUGH
  9. PRESSURE COOK THE DAL
  10. 4 TO 6 WHISTLES (DEPENDS ON THE QUALITY OF DAL)
  11. KNEED THE DOUGH
  12. HEAT MUSTARD OIL
  13. FRY SLICED COCONUT
  14. AND KEEP ASIDE
  15. ADD CUMIN SEEDS WHOLE CARDAMOM, CINNAMON,AND CLOVE
  16. ADD BAY LEAF AND WHOLE RED CILLI
  17. ADD GRETED GINGER AND FRY
  18. ADD CUMIN POWDER AND SUGAR
  19. ADD COOKED DAL
  20. ADD WATER
  21. SALT
  22. COVER
  23. AFTER FEW MINUTES REMOVE THE COVER ADD GARAM MASHALA POWDER
  24. ADD FRIED COCONUT AND GHEE
  25. MAKE SMALL BALLS OF THE DOUGH
  26. ROLL WITH A ROLLING PIN
  27. HEAT VEGETABLE OIL OR GHEE
  28. DEEP FRY THE PURSUES BOTH SIDES PROPERLY.
  29. DRAIN THE EXCESS OIL
