ABOUT Chhanar dalna RECIPE

This is a bengali style of curry, made with home made cottage cheese balls.

Ingredients Serving: 4

  1. Milk 1 litre
  2. lemon Juice 3 Table spoon
  3. cumin powder 1/2 teaspoon, salt and slightly sugar for the dough
  4. Bay leaf 1, cumin seeds 1 teaspoon
  5. Green cilli 1
  6. sugar 2 teaspoon
  7. salt as required
  8. Termaric powder as required
  9. Kashmeri red cilli powder 1/4 teaspoon
  10. Spice paste 1& 1/2 table spoon- Cumin +ginger + Green cilli + cardamom +cinnamon +clove
  11. tomato puree 2 table spoon
  12. Crushed garam mashala 1/2 teaspoon - cardamom +cinnamon + clove
  13. mustard oil or other vegetable oil for cooking and deep frying
  14. ghee 1 teaspoon

Instructions

  1. BOIL MILK
  2. ADD LEMON JUICE AND STIR
  3. PASS THROUGH A CLEAN CLOTH
  4. TIE THE CLOTH AND
  5. HANG FOR ABOUT 30 MINUTES
  6. ATHENA IS READY
  7. ADD CUMIN POWDER, SALT AND SLIGHTLY SUGAR
  8. KNEED PROPERLY
  9. MAKE SMALL BALLS
  10. HEAT OIL
  11. FRY THE CHHENA BALLS
  12. DRAIN THE EXCESS OIL AND KEEP ASIDE
  13. TAKE GINGER,CINNAMON,CARDAMOM, CLOVE, GREEN CILLI AND CUMIN SEEDS AND GRIND
  14. MAKE PASTE
  15. DEEP FRY POTATOES
  16. DRAIN THE EXCESS OIL AND KEEP ASIDE
  17. HEAT OIL
  18. ADD CUMIN SEEDS
  19. ADD GREEN CILLI AND BAY LEAF
  20. ADD FRIED POTATOES
  21. ADD THE SPICE PASTE
  22. MIX
  23. ADD SUGAR, KASHMERI RED CILLI POWDER, TURMERIC POWDER
  24. ADD SALT AND MIX WELL ADD WATER
  25. COVER IT
  26. AFTER 7-8 MINUTES REMOVE THE COVER ADD TOMATO PUREE
  27. ADD LITTLE WATER
  28. ADD PANEER OR CHHENA BALLS
  29. COVER AGAIN
  30. REMOVE THE COVER
  31. ADD CRUSHED GARAM MASHALA AND GHEE
  32. COVER AGAIN AND TURN OFF THE FLAME LEAVE IT FOR FEW MINUTES.
