Ingredients Serving: 4

  1. Chopped greens 2 cups
  2. shallots 100 gms
  3. Red chillies 4
  4. garlic pods 6
  5. Curry leaves few
  6. Mandi (rice soaked water) 1 cup
  7. jeera 1 teaspoon
  8. mustard seeds one teaspoon
  9. urad dal 1 teaspoon
  10. oil 2 teaspoon

Instructions

  1. RICE IS WASHED WELL AND SOAKED IN MINIMAL WATER FOR 2 HOURS
  2. DRAIN THE WATER USED FOR SOAKING RICE. THIS IS CALLED AS MANDI IN CHETTINAD CUISINE
  3. TAKE CHOPPED GREENS,SHALLOTS,GARLIC,RED CHILLIES, CURRY LEAVES AND MANDI
  4. HEAT 2 TEASPOON OIL IN A KADAI
  5. ADD 1 TEASPOON MUSTARD SEEDS
  6. ADD 1 TEASPOON URAD DAL
  7. ADD SHALLOTS
  8. SAUTE WELL
  9. ADD RED CHILLIES,GARLIC AND CURRY LEAVES
  10. SAUTE WELL
  11. ADD 1 TEASPOON JEERA
  12. ADD SALT
  13. ADD THE CHOPPED GREENS
  14. STIR WELL
  15. COOK TILL THE GREENS LEAVE THEIR OWN WATER
  16. NOW ADD THE MANDI
  17. SAUTE WELL AND COOK IN LOW FLAME TILL WATER IS REDUCED TO HALF
  18. NOW ADD 100 ML OF THICK COCONUT MILK AND SWITCH OFF
  19. CHETTINAD KEERAI MANDI IS READY.. SERVE WITH STEAMED RICE
