Ingredients Serving: 5

  1. mutton 500 grams
  2. shallots 100 grams
  3. tomato 1
  4. ginger garlic paste 1 tablespoon
  5. curry leaves few
  6. Mutton masala one tablespoon
  7. salt accordingly
  8. turmeric powder half teaspoon
  9. cinnamon 2 inches
  10. cloves 2
  11. green cardamom 2
  12. star anise 2
  13. bay leaves 2
  14. fennel seeds 1 teaspoon
  15. kakhuskhus half teaspoon
  16. grated coconut half cup
  17. groundnut oil 50 ml
  18. ghee 1 teaspoon
  19. mustard seeds half teaspoon

Instructions

  1. HEAT 2 TBSP OIL IN A PRESSURE COOKER, ADD 500 GMS WASHED MUTTON PIECES, SAUTE
  2. ONCE THE MUTTON STARTS LEAVING WATER, ADD SALT TO TASTE
  3. ADD 1 TSP TURMERIC POWDER
  4. ADD 1 TBSP EACH OF 1 GINGER-GARLIC PASTE & MUTTON MASALA
  5. MIX WELL, ADD 1 CUP OF WATER, PRESSURE COOK UPTO 6-8 WHISTLES
  6. HEAT 2 TBSP OIL, ADD 2 EACH OF GREEN CARDAMOMS & STAR ANISE, 3-4 CINNAMON STICKS
  7. ADD 1-2 BAY LEAVES, 2 DRY RED CHILLIES
  8. ADD 1 CUP CHOPPED SHALLOTS, FRY UNTIL TRANSLUCENT
  9. ADD 1 CHOPPED TOMATO, SAUTE UNTIL SOFT
  10. ADD THE COOKED MUTTON ALONG WITH THE MASALA WATER, COVER & COOK ON 5 MINS
  11. ADD 1/2 CUP FRESH COCONUT, 1 TSP EACH OF FENNEL, POPPY SEEDS, 6-7 CASHEWS TO A MIXER JAR, GRIND
  12. ADD THE GROUND PASTE TO THE SIMMERING MUTTON GRAVY, COOK UNCOVERED FOR 5 MINS
  13. HEAT 1 TSP GHEE IN A TADKA PAN, ADD 1/2 TSP MUSTARD SEEDS, 8-10 CURRY LEAVES
  14. ADD THE TADKA TO THE MUTTON GRAVY, COOK FOR 1 MINUTE
  15. GARNISH WITH 2 TBSP CHOPPED FRESH CORIANDER, TAKE OFF HEAT
  16. SERVE HOT WITH RICE / ROTI / IDLI / DOSA
