Ingredients Serving: 4

  1. Potato 1
  2. Brinjal 1
  3. Carrot 1 small
  4. Drumstick 1
  5. French beans 8-10
  6. Cluster beans 8-10
  7. Ladies finger 8-10
  8. Oil 2 tbsp
  9. Cumin seeds 1 tsp
  10. Mustard seeds 1/2 tsp
  11. Fenugreek seeds 1/4 tsp
  12. Asafetida 1/4 tsp
  13. Green chilli 1
  14. Ginger 1 inch
  15. Curry leaves 8-10
  16. Gram flour 2 tbsp
  17. Salt to taste
  18. Turmeric 1/2 tsp
  19. Coriander powder 1 tsp
  20. Red chilli powder 1 tsp
  21. Garam masala 1/2 tsp
  22. Tamarind 1 tsp
  23. Jaggery 1 tsp
  24. Fresh coriander

Instructions

  1. PREPARE 8-10 LADIES FINGER,FRENCH BEANS,CLUSTER BEANS,1 SMALL CARROT,1 POTATO,1 BRINJAL,1 DRUMSTICK.
  2. TAKE A TBSP OF OIL AND SAUTE LADIES FINGER FOR 2 MINUTES.REMOVE IN A PLATE.
  3. TAKE 2 TBSP OF OIL AND ADD 1/2 TSP MUSTARD SEEDS,1/4 TSP FENUGREEK SEEDS AND 1 TSP CUMIN SEEDS.
  4. ADD 1/4 TSP ASAFETIDA,1 GREEN CHILLI,1 TSP GRATED GINGER AND 8-10 CURRY LEAVES.
  5. NOW ADD 2 TBSP GRAM FLOUR AND MIX WELL.SAUTE ON SLOW FLAME TILL IT CHANGES COLOUR AND TURNS FRAGRANT
  6. THIS IS THE COLOUR IT SHOULD BE WHEN PROPERLY ROASTED.
  7. NOW ADD 2 CUPS OF WATER AND STIR WELL TO MAKE LUMPFREE BATTER.
  8. ADD 1/2 TSP TURMERIC,1 TSP CORIANDER POWDER,1 TSP RED CHILLI POWDER.
  9. ADD SALT TO TASTE AND MIX.
  10. ADD THE CHOPPED VEGETABLES ONE BY ONE EXCEPT BRINJAL.
  11. COVER AND SIMMER ON SLOW FLAME FOR 7-8 MINUTES.KEEP STIRING IN BETWEEN.
  12. WHEN THE VEGETABLES ARE HALF COOKED ADD CHOPPED BRINJAL.ADD A CUP OF WATER IF CURRY IS THICK.
  13. AFTER SIMMERING FOR 7-8 MINUTES CHECK IF ALL VEGETABLES ARE COOKED.
  14. ADD THE FRIED LADIESFINGER.SIMMER FOR 2 MINUTES.
  15. ADD TAMARIND EXTRACT AND A SMALL PIECE OF JAGGERY.SIMMER FOR 2 MINUTES.
  16. ADD 1/2 TSP GARAM MASALA.THE CONSISTENCY OF CURRY SHOULD BE AS SHOWN.
  17. GARNISH WITH SOME FRESH CORIANDER AND SERVE HOT WITH RICE.
