Ingredients Serving: 5

  1. 500g chicken
  2. 4-5 dry red chilli
  3. 1/2 tsp cumin seeds
  4. one teaspoon peppercorns
  5. 1.5 tbsp coriander seeds
  6. 1/2 capsicum cubed
  7. 1/2 TSP turmeric
  8. salt to taste
  9. 1 teaspoon ginger garlic paste
  10. one big onion sliced thinly
  11. 1 tomato finely chopped
  12. 10-12 cashews
  13. 2 tbsp cream
  14. 1 tsp crushed kasuri methi
  15. 3-4 tbsp chopped coriander leaves
  16. 3 cloves
  17. one small inch cinnamon stick
  18. 1 bay leaf
  19. 2-3 tbsp oil
  20. 1-2 green chillies slit
  21. ginger julienned for garnish

Instructions

  1. MARINATE CHICKEN WITH TURMERIC, SALT FOR 30 MINUTES & SOAK CASHEWS IN HOT WATER FOR 30 MINUTES THEN GRIND CASHEWS TO A PASTE.
  2. DRY ROAST CORIANDER SEEDS, JEERA, PEPPERCORNS AND RED CHILLI UNTIL AROMATIC
  3. ALLOW TO COOL COMPLETELY
  4. GRIND SPICES AND KEEP IT ASIDE
  5. HEAT OIL IN A PAN AND STIR FRY CAPSICUM FOR 1-2 MINUTES. KEEP IT ASIDE
  6. IN SAME PAN, ADD BAY LEAF, CINNAMON, CLOVES AND CARDAMOM. SAUTE FOR A MINUTE
  7. ADD ONIONS AND SAUTE UNTIL GOLDEN BROWN
  8. ADD GREEN CHILLIES AND GINGER GARLIC PASTE. SAUTE UNTIL RAW AROMA GOES AWAY
  9. ADD TOMATOES AND SAUTE UNTIL TENDER
  10. ADD SALT, CASHEW PASTE AND GROUND SPICE. RESERVE 1 TSP SPICE FOR LATER. MIX EVERYTHING WELL
  11. ADD CHICKEN AND MIX WELL
  12. COVER AND COOK ON MEDIUM HEAT UNTIL TENDER, STIRRING OCCASIONALLY
  13. ADD REQUIRED WATER AND BRING TO BOIL
  14. ADD CAPSICUM AND MIX WELL
  15. ADD CORIANDER LEAVES, KASURI METHI , RESERVED GROUND SPICE AND CREAM. MIX WELL AND SWITCH OFF
  16. GARNISH WITH CORIANDER LEAVES AND JULIENNED GINGER. SERVE HOT
