ABOUT Ragi / Kezhvaragu puttu RECIPE

One of the traditional , age old superfood . Ragi puttu is popular in Tamil Nadu . Finger millet is served in puttu form for all the age groups in the family . Oil free , fibre rich , calcium rich breakfast . In olden days , Ragi and other Millets where given priority than rice .

Ingredients Serving: 2

  1. Ragi flour 1 cup say 150 ml cup
  2. Elaichi powder 3/4 teaspoon
  3. Butter 1.5 tablespoons
  4. Palm candy powder 3/4 cup
  5. Grated fresh coconut 1 cup
  6. Water 1/2 cup or as required

Instructions

  1. Dry roast 1 cup ragi flour until flour gets heated well . Don’t change colour .
  2. Remove the flour from the heat . Add 3/4 teaspoon elaichi powder to the roasted flour.
  3. Add 1.5 tablespoons butter to the hot flour . Mix well .
  4. Boil 1/2 cup water .
  5. Now add little hot water to the flour . Don’t add too much . The flour should become moist.
  6. Once the flour is moist and wet , break the lumps with a spatula . Then use fingers when warm.
  7. You should be able to hold shapes at the same time the flour should be brittle as shown . That is
  8. the consistency of puttu flour. Preheat idli steamer until water boils well . Take two tumblers /
  9. bowls .Fill puttu flour in it . We use containers to achieve shapes alike kozhaputtu( not exactly).
  10. Cover and steam for 7 minutes in medium heat . Cooked puttu will be soft to handle . Puttu
  11. shouldn’t be dry nor soggy . Add 3/4 cup powdered palm candies to the puttu .
  12. Now take the tumblers and tilt them on a plate .
  13. Add 1 cup fresh grated coconut to the ragi puttu .
  14. Serve warm . Enjoy puttu along with coconut and powdered palm candies . Tastes divine .
