A delicious aromatic chicken pulao which I had always loved as a kid and now my kids enjoy it

Ingredients Serving: 10

  1. chicken stock
  2. chicken 1kg
  3. ginger 2inch
  4. garlic 1pod peeled
  5. saunf 2tsp
  6. jeera 1tsp
  7. Black pepper 1tsp
  8. cardamom 4
  9. Red chilli whole 5
  10. clove 4
  11. cinnamon stick 2inch
  12. javitri 1 leaf
  13. coriander seeds 2tbsp
  14. salt to taste
  15. Basmati rice 1kg
  16. onions 2
  17. tomatoes 3
  18. jeera 1tsp
  19. saunf 1 tsp
  20. Red chilli powder 2tbsp
  21. Green chillies 10
  22. curd 2cup
  23. kewra 1tsp
  24. ghee 1cup

Instructions

  1. SOAK 1 KG BASMATI BIRYANI RICE FOR AN HOUR
  2. ARRANGE ALL THE INGREDIENTS FOR THE CHICKEN YAKHANI
  3. IN A COOKER TAKE 1 LITRE OF WATER AND ADD SPICES FOR YAKHANI
  4. THEN ADD 1KG CHICKEN
  5. COOK ONLY FOR 2 WHISTLE
  6. AFTER 2WHISTLE TAKE OUT CHICKEN FROM STOCK
  7. STRAIN THE LEFTOVER STOCK
  8. ARRANGE THE INGREDIENTS FOR THE PULAO
  9. HEAT 1CUP DESI GHEE OR OIL IN A BIG POT
  10. ADD 2 BIG SLICED ONIONS
  11. WHEN GOLDEN BROWN TAKE IT OUT
  12. ADD 1TSP OF JEERA, 1TSP SAUNF AND 2 TBSP GINGER GARLIC PASTE
  13. ADD CHICKEN AND FRY ON HIGH HEAT
  14. AFTER 5MINUTES TAKE IT OUT
  15. ADD 3 CHOPPED TOMATOES AND 10GREEN CHILLIES AND 2TBSP RED CHILLI POWDER
  16. ADD HALF OF FRESH CURD
  17. ADD CHICKEN STOCK
  18. ADD HALF OF CURD AGAIN.THIS GIVES A NICE CREAMY TEXTURE TO THE PULAO
  19. ADD THE SOAKED RICE
  20. WHEN HALF COOKED ADD THE COOKED CHICKEN AND STIR LIGHTLY
  21. ADD FEW DROPS OF KEWRA
  22. ADD THE BROWNED ONIONS AND KEEP THE RICE ON DUM FOR 15MINUTES
