ABOUT Mangsher jhol RECIPE

This is a traditional bengali mutton preparation. Generally bengalies like to have Mangsher jhol Bhaat (Mutton curry and Rice) on their Sunday Feast.

Ingredients Serving: 4

  1. Mutton 800g
  2. Termaric powder salt and kashmeri red cilli powder as required
  3. sugar roughly 2 teaspoon
  4. Bay leaf 1 or 2
  5. mustard oil for cooking
  6. potato 4 -5 (as you wish)
  7. onion 3 medium size
  8. Mashala mix paste- 1
  9. tomato 1 medium size
  10. Garam mashala paste (cardamom 3+ cinnamon 1 small stick+ clove 3 )
  11. ghee 1 teaspoon

Instructions

  1. CLEAN MUTTON PIECES
  2. ADD MUSTARD OIL
  3. TERMARIC POWDER AND SALT
  4. KASHMERI RED CILLI POWDER
  5. MIX WELL
  6. MAKE A PASTE OF GINGER GARLIC CUMIN CORIANDER AND CILLI
  7. ADD BAY LEAF ONION
  8. ADD SUGAR MIX
  9. ADD SALT
  10. STIR AND FRY UNTIL BROWN IN COLOUR
  11. ADD MASHALA MIX PASTE
  12. IN ANOTHER PAN HEAT OIL AND FRY POTATOES
  13. AFTER ADDING MASHALA PASTE ADD MUTTON AND MIX
  14. ADD KASHMERI RED CILLI POWDER
  15. MIX AND ADD TOMATO
  16. STIR CONTINUOUSLY
  17. ADD POTATOES
  18. MIX
  19. ADD SALT AGAIN AS REQUIRED
  20. COVER IT WITH A LID LET IT COOK FOR ABOUT 15 MINUTES
  21. SIFT IT TO A PRESSURE COOKER
  22. PRESSURE COOK IT (4-5) WHISTLES
  23. MAKE A PASTE OF CARDAMOM PODS CINNAMON AND CLOVE
  24. AFTER RELEASING THE PRESSURE REMOVE THE LID OF THE PRESSURE COOKER
  25. ADD THE CARDAMOM- CINNAMON AND CLOVE PASTE COVER AGAIN FOR FEW MINUTES
  26. ADD 1 TEASPOON GHEE LEAVE FOR FEW MINUTES
