A delicious aromatic chicken pulao which I had always loved as a kid and now my kids enjoy it

Ingredients Serving: 10

  1. chicken stock
  2. chicken 1kg
  3. ginger 2inch
  4. garlic 1pod peeled
  5. saunf 2tsp
  6. jeera 1tsp
  7. Black pepper 1tsp
  8. cardamom 4
  9. clove 4
  10. cinnamon stick 2inch
  11. javitri 1 leaf
  12. coriander seeds 2tbsp
  13. salt to taste
  14. Basmati rice 1kg
  15. onions 2
  16. tomatoes 3
  17. jeera 1tsp
  18. saunf 1 tsp
  19. Red chilli powder 2tbsp
  20. Green chillies 10
  21. curd 2cup
  22. kewra 1tsp
  23. ghee 1cup

Instructions

  1. SOAK 1 KG BASMATI RICE FOR 1 HOUR
  2. ADD 1 LITRE WATER TO A PRESSURE COOKER, ADD SALT, 8-10 GARLIC CLOVES, 2 INCH GINGER, ALL THE SPICES
  3. ADD 1 KG CHICKEN PIECES, PRESSURE COOK UPTO 2 WHISTLES
  4. NOW SEPERATE THE CHICKEN FROM THE STOCK, SET ASIDE
  5. STRAIN THE STOCK, SET ASIDE
  6. HEAT 1 CUP GHEE, ADD 2 SLICED ONIONS, FRY UNTIL GOLDEN BROWN, REMOVE HALF THE ONIONS, SET ASIDE
  7. ADD 1 TSP EACH OF CUMIN & FENNEL SEEDS, 2 TBSP GINGER-GARLIC PASTE
  8. ADD THE CHICKEN, FRY ON HIGH HEAT FOR 5 MINS, REMOVE & SET ASIDE
  9. ADD 3 CHOPPED TOMATOES, 10 GREEN CHILLIES, 2 TBSP RED CHILLI POWDER, COOK UNTIL SOFT
  10. ADD 1 CUP FRESH CURD, SAUTE
  11. ADD THE RESERVED CHICKEN STOCK
  12. ADD 1 CUP CURD AGAIN, MIX
  13. ADD 1 KG PRE SOAKED ( 1 HOUR ) BASMATI RICE, COOK ON MEDIUM HEAT TILL HALF DONE
  14. ADD THE FRIED CHICKEN, STIR IN
  15. ADD A FEW DROPS OF KEWRA ESSENCE
  16. GARNISH WITH SOME FRIED ONIONS, COVER & COOK ON DUM FOR 15 MINS, SERVE HOT WITH RAITA
