ABOUT Soyi Khadi / Coconut Jaggery Burfi RECIPE

Traditional sweet of India . This sweet is traditionally made almost in every Indian households with different regional names . It’s called Soyi Khadi in Konkani .

Ingredients Serving: 10

  1. Freshly grated coconut 2 cups
  2. Jaggery powdered 2 cups
  3. Cardamom powder 1 teaspoon
  4. Ghee 2 teaspoons
  5. Sliced almonds 2.5 tablespoons
  6. Water 1 cup

Instructions

  1. Take 2 cups jaggery . Pour 1 cup water .
  2. Start dissolving the jaggery in low heat .Boil jaggery syrup for 3 minutes . Filter impurities.
  3. In another pan , dry roast 2 cups fresh shredded coconut in low heat . Roast until texture changes.
  4. Now pour the filtered hot jaggery syrup to the roasted coconut . Keep stirring .
  5. Stir occasionally . You could see the content firming up .
  6. Keep cooking patiently .
  7. As it firms further , add ghee .
  8. Could see bubbles released on the sides while the content is firm . Add sliced almonds, teaspoon
  9. cardamom powder . Keep stirring until the mixture rolls over the ladle . Switch off .
  10. Spread a butter paper on a plate .
  11. Transfer the coconut jaggery mixture to the butter paper . Level the surface , sides evenly .
  12. Cut into burfis while warm . Sprinkle extra almond slices if preferred . Cool completely and serve.
  13. Soyi khadis / Coconut jaggery Burfis are ready to relish .
