ABOUT Dum Pukht RECIPE

Dum Pukht is not so spicy,less oily not to much adding colour of masala but after this it's so tasty and yummy traditional recipe.

Ingredients Serving: 4

  1. 600 gram mutton
  2. 200 gram mutton fat
  3. 3 potatoes cut in half
  4. 3 tomatoes cut in half
  5. 1 lemon wedges
  6. 1 tsp black pepper powder
  7. 2 onion cut in slice
  8. 8 to 10 garlic slice
  9. 1 inch ginger slice
  10. 5 to 6 green chillies cut in slice or whole
  11. Salt as per taste
  12. 1 tbsp milk
  13. Few saffron stings
  14. 1 tsp rose water
  15. Hard knead dough

Instructions

  1. ARRANGE ALL INGREDIENTS
  2. TAKE 200 GRAM MUTTAN FAT AND PLACE IN BOTTAM LIKE THIS
  3. NOW ARRANGE 600 GRAM MUTTON PIECES OVER THE FAT
  4. SPRINKLE SOME SALT AND PEPPER OVER THIS
  5. 3 POTATOES CUT IN HALF ARRANGE OVER THE NUTTON SIDES
  6. NOW PLACE 3 TOMATOES CUT IN HALF OVER THE PIECES
  7. PLACE 1 LEMON WEDGES IN BETWEEN THE TONATOES AND POTATOES
  8. NOW ARRANGE 2 ONION SLICE
  9. PLACE 8 TO 10 GARLIC CLOVES CUT IN SLICE
  10. ARRANGE 1 INCH GINGER IN SLICE
  11. ADD 5 TO 6 GREEN CHILLIES CUT IN HALF OR CAN ARRANGE WHOLE(OPTIONAL)
  12. SPRINKLE 3/4 TSP BLACK PEPPER POWDER
  13. SPRINKLE SALT ACCORDING TO TASTE
  14. ADD 1/2 GLASS WATER TO COOK AND PREVENT TO BURN NOT ADD MORE WATER
  15. ADD 1 TBSP MILK WITH SOME SAFFRON STRINGS
  16. ADD 1 TSP ROSE WATER
  17. NOW ARRANGE HARD KNEAD DOUGH AND COVER THE HANDI TIGHTLY
  18. NIW KEEP HANDI ON LOW FLAME FOR 1 HOUR TO COOK MUTTON
  19. MAKE SURE NO STEAM PASS
  20. AFTER 45 MINUTES BURN SOME COAL PIECES AND ARRANGE OVER THE LID FOR DUM
  21. AFTER AN HOUR REMOVE BURNING COALS AND CUT THE DOUGH CAREFULLY
  22. AND OPEN THE LID
  23. REMOVE THE DOUGH FROM CORNERS ,NOW DUM PUKHT IS DONE
  24. TRANSFER IN SERVING PLATE
