ABOUT Layali Lubnan/Lebanese Nights (Semolina Pudding) RECIPE

A Middle Eastern dessert most popular in Levantine Countries like Lebanon, Syria, Palestine and Iraq. The name translates to Lebanese Nights and is a mildly sweet dessert with semolina and cream layers with a bed of pistachio slivers and usually served with the syrup. Hence the syrup can be adjusted to one's own choice and this is a perfect dessert for people with Diabetis and they can enjoy it without the syrup. Delicate, melt in mouth and scrumptious dessert is loved by Arabs and can be whipped up very easily. A perfect one to complete your weekend meals. Orange blossom water and rose water are generally added but can be skipped totally and can be substituted with vanilla essence instead. There are umpteen number of variations for this lovely dessert but the most basic one is with semolina and cream. I have added pistachios not only on top but also in between the 2 layers for an added crunch. Enjoy!

Ingredients Serving: 8

  1. Semolina 1 cup
  2. Full fat milk 4 cups
  3. Vanilla essence 1 tsp
  4. Pistachio slivers 2/3 cup
  5. Whipping cream 1 cup
  6. sugar 1 cup
  7. Water 1 cup
  8. rose water 1/2 tsp
  9. Lemon juice 1 tbsp

Instructions

  1. ADD A CUP OF SEMOLINA TO A PAN WITH ABOUT 4 CUPS
  2. OF FULL FAT MILK.
  3. ADD A TEASPOON OF VANILLA ESSENCE NEXT.
  4. MIX WELL AND COOK ON A LOW TO MEDIUM HIGH HEAT UNTIL
  5. IT STARTS TO THICKEN.
  6. COOK UNTIL IT REACHES THIS CONSISTENCY AND REMOVE IT
  7. IN A DISH AS SEEN.
  8. SMOOTHEN IT OUT, COVER AND LEAVE IT ON THE KITCHEN COUNTER UNTIL IT COOLS DOWN.
  9. SLICE ABOUT 2/3 RD CUP OF PISTACHIOS
  10. SPRINKLE HALF OF THEM ON THE SEMOLINA AND MILK MIXTURE AND RESERVE THE REST FOR THE FINAL GARNISHING.
  11. GET THE SUPER CHILLED BOWL AND THE WHIPPING CREAM READY.
  12. ADD 1 CUP OF WHIPPING CREAM TO THE BOWL
  13. AND BEAT WITH AN ELECTRIC BEATER UNTIL SOFT PEAKS ARE FORMED.
  14. FOR ABOUT 3-4 MINUTES
  15. UNTIL DONE LIKE THIS.
  16. ADD THIS WHIPPED CREAM INTO THE SEMOLINA MIX
  17. SMOOTHEN IT OUT WELL
  18. GARNISH WITH THE REST OF THE PISTACHIO SLIVERS.
  19. AND REFRIGERATE IT UNTIL CHILLED AND READY TO SERVE.
  20. MEANWHILE PREPARE SUGAR SYRUP BY ADDING A CUP OF SUGAR AND WATER EACH TO A PAN.
  21. WITH ABOUT 1/2 A TEASPOON OF ROSE WATER.
  22. AND A TABLESPOON OF LEMON JUICE.
  23. ALLOW IT TO BOIL UNTIL IT REACHES A ONE STRING CONSISTENCY.
  24. AND THICKENS UP. RESERVE IT FOR SERVING WITH THE DESSERT LATER ON.
  25. SOFT AND MILDLY SWEET DESSERT LAYALI LUBNAN/LEBANESE NIGHTS IS ALL READY. SERVE IT WITH SUGAR SYRUP BEING DRIZZLED ON TOP.
