ABOUT Spicy Acrote RECIPE

Spicy Acrote is a traditional Mangalorean dessert. It's very tasty, healthy and very useful in monsoon season. It's just from my childhood memories. I had it about 30 years back, even I remember the flavor of that, but I couldn't reach that taste, anyhow I got satisfaction with the love of my family members. All the four had these lip smacking tasty and simple Acrote.

Ingredients Serving: 4

  1. jaggery 1/2 cup
  2. water 1/4 cup
  3. Wheat flour 1/2 cup
  4. Grated coconut 1/2 cup
  5. salt a pinch
  6. Black pepper powder 1 tsp
  7. Dry ginger powder 1 tsp
  8. jeera powder 1 tsp
  9. ghee 1 tsp
  10. coconut oil 1/8 tsp

Instructions

  1. DRY ROAST HALF CUP OF WHOLE WHEAT FLOUR
  2. ROAST UNTIL GOOD AROMA IN LOW FLAME, TRANSFER INTO A PLATE
  3. FRY GRATED COCONUT HALF CUP IN THE SAME PAN
  4. FRY TILL BROWN IN COLOUR AND KEEP ASIDE
  5. HEAT HALF CUP JAGGERY BY ADDING QUARTER CUP OF WATER
  6. STIR UNTIL JAGGERY COMPLETELY MELTS
  7. AFTER COMPLETE MELT TAKE OFF FLAME
  8. FILTER THE SYRUP TO REMOVE IMPURITIES
  9. STIR AND BOIL IT AGAIN ON LOW HEAT UNTIL THE JAGGERY SYRUP TURNS THICK
  10. IN THE MEANTIME APPLY 1/8 TSP OF COCONUT OIL INTO PLATE
  11. SPRINKLE A TSP OF FRIED WHEAT FLOUR ON IT AND KEEP ASIDE
  12. JAGGERY SYRUP IS READY WITH ONE STRING CONSISTENCY AND STICKY
  13. ADD FRIED WHEAT FLOUR AND COCONUT
  14. SALT A PINCH, JEERA POWDER 1 TSP, BLACK PEPPER POWDER 1 TSP, DRY GINGER POWDER 1 TSP
  15. MIX WELL
  16. ADD GHEE 1 TSP
  17. TAKE OFF THE FLAME AND MIX WELL
  18. SPREAD THE MIXTURE ON PLATE
  19. JUST GENEROUS APPLY WHEAT FLOUR ON YOUR PALM AND MAKE ROUND BALLS IN HOT ONLY
  20. EVEN YOU THROW THEM, THEY WILL NOT BE STICKY OR BREAK UP
  21. PRESS LIGHTLY AND SERVE AFTER COOL IN ROOM TEMPERATURE
