Khadim pak is made using fresh coconut and milk. It is very delicious,chewy and nutty . First time I know about this recipe from a great chef Sheetal. Khadim Pak gets its name from the person who first made it and originated from the coastal town of Mangrol in junagadh. Fresh coconut taste is heavenly awesome..

1 fresh coconut around 1 cup
1 litre full cream milk
1/2 cup sugar
1 tbsp chopped cashews

2 tsp ghee

Instructions

GRATE 1 FRESH COCONUT
IN A PAN HEAT 1 LITER MILK ON MEDIUM FLAME
BOIL IT UNTIL IT REACHES THICK CONSISTENCY
IN A WOK HEAT 2TSP GHEE AND ROAST CASHEWS
ADD GRATED COCONUT
ROAST IT FOR 2 MINUTES
NOW ADD COCONUT AND MIX IT
ADD SUGAR AROUND 1/2 CUP OR ACCORDING TO TASTE
MIX WELL AND CONTINUE TO COOK TILL THE SUGAR HAS MIXED WELL.
ITS MOISTURE HAS EVAPORATED AND COCONUT IS CHANGE IN PALE BROWN COLOUR.
TURN OFF THE FLAME AND TRANSFER THE CONTENT TO A GREASED THALI
SPRINKLE SOME CHOPPED ALMONDS,PISTACHIOS AND ROSE PETALS. PRESS GENTLY WITH SPOON
ONCE KHADIM PAK IS COOLED DOWN CUT IT INTO SQUARE OR IN ANY DESIRE SHAPE
