Ingredients Serving: 4

  1. cauliflower 1/2 cup
  2. carrots 1/2 cup
  3. French beans 1/2 cup
  4. Green peas 1/2 cup
  5. spinach 1 cup
  6. butter 2 tbsp
  7. flour 2 tbsp
  8. Milk 2 cups
  9. Cheese 1/4+3/4 cup
  10. salt to taste
  11. Black pepper to taste

Instructions

  1. PREPARE 1/2 CUP EACH OF GREEN PEAS,FRENCH BEANS,CARROTS AND CAULIFLOWER.BOIL THESE IN 2 CUPS WATER WITH SOME SALT.
  2. BLANCH SPINACH AND ADD TO MIXER.MAKE PUREE.
  3. TAKE 2 TBSP BUTTER AND ADD 2 TBSP FLOUR TO IT.
  4. SAUTE TILL 2 MINUTES STIRRING CONTINUOSLY.
  5. ADD 2 CUPS MILK INTO THIS AND STIR WELL SO THAT NO LUMPS ARE FORMED.
  6. WHITE SAUCE IS READY.ADD 1/4 CUP GRATED CHEESE,SALT AND BLACK PEPPER.
  7. ADD THE BOILED VEGETABLES TO WHITE SAUCE.
  8. MIX AND ADD 2 TBSP SPINACH PUREE.MIX AND SIMMER FOR 1 MINUTE AND SWITCH OFF THE GAS.
  9. PUT THE PREPARED VEGETABLE MIX IN A BAKING DISH.
  10. SPRINKLE 3/4 CUP GRATED CHEESE ON THE SURFACE.
  11. BAKE IN A PREHEATED OVEN AT 200 DEGREES C FOR 15 MINUTES OR TILL CHEESE MELTS AND TURNS BROWN.
