ABOUT Sita bhog with Nikhuti RECIPE

This recipe is from burdwan district (West Bengal) where i used to reside. My mum used to tell me stories about the origin of this authentic recipe which is my favourite dish. This is a cheat day recipe and one should forget entirely about health while eating this recipe. :)

Ingredients Serving: 4

  1. Cottage cheese 1 1/2 cups
  2. Rice powder 1 cup
  3. Sugar 3/4 cup + 3/4 cup
  4. Water 1 cup + 1 cup
  5. Oil for frying
  6. Cardamom powder 1 teaspoon
  7. Saffron a pinch
  8. Milk powder 1 cup
  9. Flour 1/2 cup
  10. Baking powder 1/2 teaspoon
  11. Ghee 1 1/2 spoon + and for frying
  12. Curd 2 tablespoon
  13. Food colour 1/2 teaspoon
  14. Cashew nut for decoration

Instructions

  1. TAKE THE COTTAGE CHEESE IN A PLATE
  2. ADD RICE POWDER
  3. KEEP KNEADING. MAKE THE DOUGH SOFT AND ELASTIC
  4. HEAT A KADAI POUR OIL AND HEAT IT
  5. PUT ONE BALL OF CHEESE AND PRESS IT SO THAT TINY RICE LIKE OBLONG BEATS OF CHEESE DROP INTO THE OIL
  6. DEEP FRY TILL LIGHT BROWN COLOUR
  7. TAKE THEM OUT AND KEEP IT ASIDE
  8. MAKE SUGAR SYRUP
  9. ADD CARDAMOM POWDER AND SAFFRON
  10. ADD THE FRIED CHEESE DROPS INTO THE SUGAR SYRUP. MIX IT WELL AND SOAK FOR 10-15 MINS
  11. FOR NIKHUTI (BALLS):- TAKE MILK POWDER IN A PLATE
  12. ADD FLOUR
  13. ADD CARDAMOM AND BAKING SODA
  14. ADD CURD
  15. ADD GHEE
  16. MAKE A DOUGH
  17. PREPARE SMALL BALLS OUT OF IT
  18. DEEP FRY THE BALLS UNTIL GOLDEN BROWN
  19. MAKE A LIGHT CONCENTRATION SUGAR SYRUP
  20. ADD CARDAMOM POWDER
  21. ADD FOOD COLOUR
  22. PUT THE SMALL BALLS
  23. MIX THE NIKHUTI INTO THE CHEESE GRAINS. DECORATE WITH FRIED CASHEW NUTS.
