Ingredients Serving: 4

  1. Chicken thighs 4
  2. Cottage cheese grated 1 cup
  3. Ricotta cheese 2 tablespoons or as preferred
  4. Processed salted cheese 1/4 cup
  5. White pepper powder 1.5 tablespoon
  6. Ginger garlic paste 1 tablespoon
  7. Chaat masala powder 1 tablespoon
  8. Dried fenugreek leaves/ Kasuri methi crushed a fistful
  9. Whole black pepper roughly crushed 2 tablespoons
  10. Yellow capsicum medium 1/2
  11. Green capsicum strips medium 1/2
  12. Lemon 1
  13. Butter 2 tablespoons

Instructions

  1. Take 1 cup grated cottage cheese , 2 tablespoons ricotta cheese in a bowl .
  2. Add required processed cheese triangles .
  3. Mash the cheeses well . Add 1.5 tablespoons white pepper powder .
  4. Add 1 tablespoon chaat masala powder .
  5. Add a fistful crushed dried fenugreek leaves / kasuri methi .
  6. Add 1 tablespoon ginger garlic paste . Mix all together to a sticky paste .
  7. Make deep cuts on the chicken thighs as shown .
  8. Stuff the cheesy paste inside the deep cuts . Stuff well for a rich taste .
  9. Similarly stuff and coat on the remaining thighs as well .
  10. Marinate cheese stuffed thighs in the remaining cheese along with green, yellow capsicum strips for
  11. 20 minutes . Heat 2 tablespoons butter in a pan .
  12. Place the marinated chicken thighs with capsicums and marinade to the hot butter.
  13. Pan sear the thighs in high for 5 minutes . Needn’t cook .
  14. Transfer few pan seared thighs to a greased baking tray .
  15. Cover and bake in a preheated wok for 15 minutes in medium to high . Preheating time is 10 minutes.
  16. Reserve the rest ( thighs ) for roasting . Maintain a medium flame .
  17. Chicken is roasted . Add a tablespoon roughly crushed black pepper .
  18. Likewise add pepper to the baked chicken .
  19. Squeeze lemon on the roasted chicken .
  20. Likewise squeeze lemon on the baked chicken .
  21. Baked Cheesy Chicken is ready .
  22. Serve hot .
  23. Pan roasted cheesy chicken is also ready . Enjoy these two cheesy chicken varieties .
