Ingredients Serving: 1

  1. Milk 1ltr
  2. vinegar 1 tsp
  3. cardamom 4 to 5
  4. kesar a few strands
  5. Corn flour 1.5 tbsp
  6. Puree ghee 2 tbsp

Instructions

  1. BRING 1 LITRE MILK TO A BOIL, ADD 1 TSP VINEGAR, SIMMER FOR 2-4 MINS
  2. TAKE OFF HEAT ONCE THE MILK CURDLES LIKE THIS
  3. DRAIN THE MIXTURE INTO A MUSLIN CLOTH, SQUEEZE OUT THE EXCESS WATER, SET ASIDE
  4. TAKE 1 CUP SUGAR, ADD 250 ML WATER, BRING TO A BOIL
  5. ADD 2 GREEN CARDAMOMS, A FEW STRANDS OF SAFFRON
  6. TAKE OFF HEAT WHEN THE SUGAR SYRUP TURNS THICK & ATTAINS A 2 STRAND CONSISTENCY
  7. TAKE THE READY PANEER
  8. ADD 1 TSP GREEN CARDAMOM POWDER, 1 TBSP ALL PURPOSE FLOUR, MIX
  9. MASH & KNEAD UNTIL IT TURNS SOFT
  10. PRESS DOWN & STRETCH THE DOUGH LIKE THIS
  11. MAKE SMALL BALLS OF THE READY DOUGH, FLATTEN THEM OVER A MUSLIN CLOTH
  12. SHAPE INTO MEDIUM SIZED DISCS
  13. SHALLOW FRY IN HOT GHEE
  14. FLIP & FRY UNTIL GOLDEN BROWN ON BOTH SIDES
  15. DIP THE HOT MALPUAS INTO THE READY SUGAR SYRUP
  16. GARNISH WITH ALMOND & PISTACHIO SLIVERS
  17. SERVE WITH RABDI, TRY THEM, THEY'RE DELICIOUS
