Red chilli powder 1/2 tesp
turmeric powder 1/4 tesp
Carrom seeds 1/4 tesp
Baking soda a pinch
oil for deep frying
curd 1 cup
tamarind chutney 2 tbsp
mint chutney 2 tbsp
Instructions
TAKE 1 CUP GRAM FLOUR, ADD 1/2 TSP EACH OF
SALT, RED CHILLI, TURMERIC & PEPPER POWDERS
ADD A PINCH OF BAKING SODA, 1/4 TSP CAROM
SEEDS
ADD SUFFICIENT WATER TO MAKE A BATTER
MAKE A THICK & SMOOTH BATTER LIKE THIS
WASH & DRY 10-12 SPINACH LEAVES
DIP A SPINACH LEAF IN THE READY BATTER, DROP
INTO HOT OIL TO FRY
DEEP FRY FOR 1 MINUTE ON BOTH SIDES ON
MEDIUM HEAT
TAKE OFF HEAT WHEN GOLDEN BROWN
REFRY THE SPINACH AFTER 5 MINS
FRY UNTIL CRISP, REMOVE & PLACE ON
ABSORBENT PAPER
ARRANGE IN A SERVING DISH, TOP WITH 2-4 TBSP
CHILLED, WHIPPED CURD
SPRINKLE SALT, RED CHILLI & ROASTED CUMIN
POWDER TO TASTE
TOP WITH 1 TBSP EACH OF TAMARIND & MINT
CHUTNEYS
GARNISH WITH BOONDI, SERVE IMMEDIATELY
