ABOUT MATKI CHI USAL RECIPE

Usal pav is a well known street food in the state of Maharashtra after vada pav. A spicy, thin curry recipe made using Turkish beans/matki beans is served with pav, farsan, onion & a dash of lime

Ingredients Serving: 4

  1. 200grams matki/turkish bean/moth bean
  2. 1 large potato
  3. 1 large onion
  4. 1 large tomato
  5. 1 tablespoons ginger garlic paste
  6. 1 green chilli
  7. 1/4 cup dried coconut
  8. 1 tablespoon Kashmiri red chilli powder
  9. 1/4 teaspoon turmeric powder
  10. 1 teaspoon coriander powder
  11. 1 tablespoon goda masala/garam masala can be used instead
  12. 4 tablespoon oil
  13. 1/2 teaspoon sarso/mustard seeds
  14. 1/4 tsp hing/asafoetida
  15. 10-12 curry leaves/karipatta
  16. 8 pieces of pav
  17. Mix farsan, lime slices & sliced onion.

Instructions

  1. SOAK 200GMS MATKI/TURKISH BEAN FOR 6HOURS. DRAIN EXCESS WATER & TIE THEM IN MUSLIN CLOTH. LEAVE THEM TO SPROUT FOR 8 HOURS
  2. PEEL & CHOP 1 LARGE POTATO IN CUBES
  3. HEAT 1 TEASPOON OIL IN A PAN
  4. ADD 1 LARGE ONION, SLICED
  5. SAUTE UNTIL IT STARTS TURNING PINK
  6. ADD 1/4TH CUP DRY COCONUT, GRATED. SAUTE UNTIL IT TURNS GOLDEN BROWN
  7. ALLOW THIS TO COOL COMPLETELY, THEN TRANSFER INTO A MIXER JAR.
  8. TO THIS ADD 1 LARGE TOMATO, ROUGHLY CHOPPED.
  9. GRIND TO A FINE PASTE
  10. HEAT 3 TBSP OIL IN A DEEP PAN
  11. ADD 1/2 TSP SARSO/MUSTARD SEED TO IT. ALLOW IT TO CRACKLE.
  12. NEXT ADD 1/4 TSP ASAFOETIDA & 1 CHOPPED GREEN CHILLI. SAUTE FOR 30 SECONDS
  13. ADD 10-12 CURRY LEAVES
  14. NOW ADD THE ONION TOMATO PASTE
  15. 1TBSP GINGER GARLIC PASTE
  16. 1 TBSP KASHMIRI RED CHILLI POWDER. 1/4 TSP TURMERIC POWDER
  17. 1 TSP CORIANDER POWDER & 1 TBSP GODA MASALA (CAN USE GARAM MASALA POWDER INSTEAD)
  18. SAUTE EVERYTHING ON A MEDIUM FLAME UNTIL OIL SEPARATES
  19. AFTER 3-4 MINUTES OILS STARTS TO LEAVE THE MASALA
  20. ADD THE POTATO CUBES & SPROUTED MATKI
  21. ADD 1 TBSP SALT & MIX EVERYTHING WELL
  22. ADD 3 CUPS OF WATER & LET THIA COME TO A BOIL
  23. LOWER THE FLAME, PUT ON THE LID & COOK FOR ABOUT 18-20 MINUTES
  24. OUR MATKI USAL IS READY TO BE SERVED.
