ABOUT Veg Empanadas RECIPE

This is a famous street food from Argentina and is prepared with a pastry dough filled with various non veg stuffings but here I have made the vegetarian version with a delicious cheesy mushroom stuffing.#earnwithbetterbutter

Ingredients Serving: 8

  1. For the empanada covering:
  2. All purpose flour 1 & 1/4 cups
  3. Wheat Flour 3/4 cup
  4. salt 1 tsp
  5. chilled butter 1/2 cup
  6. Cold water as required
  7. For the filling:
  8. mushrooms 10-12
  9. onion 1 big
  10. capsicum 1 big
  11. carrots 2 medium
  12. garlic 6 cloves
  13. Cheese 1/2 cup
  14. salt to taste
  15. Black pepper 1 tsp
  16. Milk and oil 1 tbsp each for mulk wash

Instructions

  1. PREPARE 1 & 1/4 CUPS ALL PURPOSE FLOUR,3/4 CUPS WHEAT FLOUR,1 TSP SALT,1/2 CUP BUTTER AND COLD WATER.
  2. TAKE BOTH FLOURS AND SALT.MIX WELL.
  3. ADD CHILLED BUTTER CUT INTO SMALL PIECES AND RUB INTO THE FLOUR.
  4. WHEN YOU GET BREAD CRUMB LIKE CONSISTENCY ADD CHILLED WATER LITTLE BY LITTLE AND MAKE A DOUGH.
  5. DO NOT KNEAD THE DOUGH,JUST BRING IT TOGETHER.
  6. KEEP THE BALL OF DOUGH IN CLING FILM AND WRAP.KEEP IN FRIDGE FOR AN HOUR.
  7. CHOP THE VEGETABLES FOR FILLING.
  8. TAKE A TBSP OF OLIVE OIL AND ADD 6 CLOVES OF FINELY CHOPPED GARLIC.
  9. ADD FINELY CHOPPED ONION AND SAUTE FOR 2 MINUTES.
  10. ADD 2 GRATED CARROTS AND SAUTE FOR A MINUTE.
  11. NOW ADD CHOPPED MUSHROOMS.
  12. ADD SALT AND MIX WELL.
  13. AFTER THE MUSHROOMS ARE ALMOST COOKED,ADD CHOPPED CAPSICUM.
  14. ADD BLACK PEPPER TO TASTE.SAUTE FOR 2-3 MINUTES AND OUR FILLING WILL BE READY.
  15. NOW TAKE THE DOUGH AND PINCH A SMALL BALL FROM IT.
  16. SPRINKLE SOME FLOUR AND ROLL THE DOUGH BALL INTO A BIG DISC.KEEP REST OF THE DOUGH IN FRIDGE.
  17. CUT INTO SMALL CIRCLES WITH THE HELP OF A ROUND CUTTER OR GLASS.
  18. SLIGHTLY ROLL INTO OVAL SHAPE.
  19. NOW PLACE THE MUSHROOM FILLING IN CENTER.
  20. SPRINKLE SOME GRATED CHEESE OVER THE FILLING.
  21. APPLY WATER TO THE EDGES AND SEAL INTO A SEMI CIRCLE.
  22. NOW SEAL WITH FORK SO THAT FILLING DOESN'T COME OUT.
  23. MIX A TBSP OF OIL AND MILK AND BRUSH ON THE EMPANADAS.
  24. KEEP IN A PREHEATED OVEN AT 180 ℃ FOR 20 MINUTES OR TILL THE TOP BROWNS A LITTLE.
  25. OUR CRISP AND FLAKY EMPANADAS ARE BAKED PERFECTLY.
