Ingredients Serving: 4

  1. half cup black gram skinned (dhuli urad)
  2. 1 cup Idli Rava
  3. one fourth Cup boiled beetroot paste
  4. one fourth Cup carrot and tomato paste
  5. one fourth Cup coriander and celery paste
  6. 10 to 15 strands of saffron
  7. salt to taste
  8. one teaspoon oil for tempering
  9. one teaspoon chana dal
  10. one teaspoon black gram skinned
  11. grated carrot for garnishing
  12. dry fruit for garnishing
  13. 4 tablespoons of Hung curd for garnishing

Instructions

  1. SOAK 1/2 CUP BLACK GRAM SKINNED DAAL OVERNIGHT AND 1 CUP IDLI RAVA SEPARATELY FOR 3 HOURS
  2. BLEND THE BLACK GRAM SKINNED TO A SMOOTH, GLOSSY PASTE USING VERY LITTLE WATER
  3. KEEP THE PASTE IN A BOWL
  4. NOW DRAIN THE EXTRA WATER FROM IDLI RAVA AND SQUEEZE IT BETWEEN YOUR PALMS TO REMOVE THE MAXIMUM POSSIBLE WATER AND MIX IN THE DAAL PASTE
  5. MIX THE BATTER NICELY
  6. DIVIDE THE BATTER INTO 5 PARTS
  7. WE WILL ADD NATURAL COLOURS AND FLAVOURS TO 4 PARTS AND ONE PART WILL BE WHITE
  8. ADD BEETROOT PASTE LITTLE BY LITTLE TO 1ST PART AND MIX NICELY AND ADJUST THE CONSISTENCY
  9. BEET BATTER IS READY
  10. ADD TOMATO AND CARROT PASTE TO 2ND PART AND MIX NICELY
  11. TOMATO AND CARROT BATTER IS READY
  12. STRAIN THE SAFFRON STRANDS AND MIX IN THE 3RD PART
  13. SAFFRON BATTER IS READY
  14. ADD CORIANDER AND CELERY PASTE TO THE 4TH PART AND MIX
  15. CORIANDER AND CELERY BATTER IS READY
  16. ALL THE BATTERS ARE READY. ADJUST THE CONSISTENCY OF THE BATTER WITH PASTE ONLY. ADD WATER TO THE WHITE BATTER TO GET IT TO A RIGHT CONSISTENCY
  17. ADD SALT TO ALL THE BATTERS
  18. IN A MINI PAN HEAT 1 TSP OIL
  19. ADD 1 TSP CHANA DAAL, 1 TSP BLACK GRAM SKINNED DAAL AND LET THEM SPLUTTER, WE WILL USE IT TO GARNISH THE IDLI
  20. GREASE THE IDLI MOULDS
  21. IN SOME MOULDS ADD FRIED DAAL, GRATED CARROTS, DRYFRUITS,ETC TO GARNISH
  22. NOW POUR THE BATTER AND MAKE DESIGNS AS PER UR IMAGINATION
  23. MIX AND MATCH THE BATTERS
  24. YOU CAN MAKE SEVERAL DESIGNS WITH DIFFERENT COLOUR COMBOS
  25. STEAM THEM FOR 8 TO 10 MINS
  26. STEAM ON MEDIUM TO HIGH HEAT
  27. IDLIS ARE READY, SCRAP AFTER 5 MINUTES AND SERVE HOT WITH SAMBHAR, CHUTNEY OR HUNG CURD ICING.
