Ingredients Serving: 4

  1. 4 cups wheat flour
  2. 1 cup maize flour
  3. 1/2 tsp soda
  4. 1 tsp turmeric powder
  5. 1 tsp salt
  6. 1 tsp carom seeds
  7. 2 tsp fresh cream
  8. 2 tsp oil
  9. Water to knead the dough
  10. 2 cups ghee to soak batis
  11. For daal
  12. 1 cup tuar daal
  13. 1 tsp peanuts
  14. 1 tsp turmeric powder
  15. 2 tsp ghee
  16. 1 tsp cumin seeds
  17. 1 tsp mustard seeds
  18. Few curry leaves
  19. 2 red dry chilly
  20. 2 tsp green chilli ginger paste
  21. 1 tsp hing
  22. 1 tsp coriander powder
  23. 1 tsp red chilli powder
  24. 4 kokum
  25. 1p piece jaggery(20 gms)
  26. Salt
  27. 1 tsp Coriander finely chopped

Instructions

  1. TAKE 4 CUPS OF WHEAT FLOUR,1 CUP MAIZA FLOUR IN A VESSEL,ADD 1/4TSP SODA,1/2 CAROM SEEDS
  2. ADD REQUIRED SALT,1 TSP TURMERIC POWDER
  3. ADD 2 TSP OIL,2 TSP FRESH CREAM AS THIS MAKES OUR BATI SOFT..
  4. HERE I HAVE USED STORED MILK CREAM ..YOU CAN REPLACE WITH FRESH CURD ..
  5. MIX ALL THE INGREDIENTS PROPERLY TO FORM CRUMBLY TEXTURE
  6. ADD WATER LITTLE BY LITTLE AND FORM A PARATA DOUGH
  7. NOW COVER THE DOUGH AND KEEP IT ASIDE FOR 20 MIN
  8. ROLL BIG CHAPATIS OF THE DOUGH
  9. SPREAD 1TSP OIL ON THE ROLLED CHAPATI
  10. ROLL THE CHAPATI AS SHOWN TO FORM ELONGATED DOUGH
  11. NOW CUT INTO 3 PARTS AS SHOWN AND PRESS EACH BETWEEN YOUR PALMS FORMING ROUND FLAT BALLS.
  12. REPEAT THE SAME PROCESS FOR ALL THE LEFT DOUGH. MAKE BATIS & PLACE THEM ON GREASED PERFORATED PLATE
  13. PLACE THE PLATE IN STEAMER STAND AND TRANSFER THE STAND TO IDLI COOKER..STEAM FOR 10 MIN
  14. AFTER 10 MIN,OPEN THE LID OF COOKER.YOU WILL NOTICE THAT BATIS HAVE ENLARGED.OFF THE GAS.COOL BATIS
  15. LET'S START WITH PROCESS TO COOK DAAL.WASH 1 CUP DAAL .ADD 1TSP PEANUTS IN PRESSURE COOKER WITH DAAL
  16. ADD 1/2 TSP TURMERIC POWDER,2CUPS WATER AND PRESSURE COOK FOR 15 MIN ON SLOW FLAME
  17. HEAT 2 TBSP GHEE IN A WOK..ADD 1 TSP EACH MUSTARD SEEDS AND CUMIN SEEDS AND WAIT TILL THEY CRACKLE
  18. ADD 1 TSP GREEN CHILLY GINGER PASTE,1 TSP ASFODIA(HING),FEW CLOVE,PEPPERS,CINNAMON STICKS
  19. ADD 5-6 CURRY LEAVES,2 RED CHILLY,1/2 TSP TURMERIC POWDER
  20. NOW ADD 1 TSP CORIANDER POWDER,1 TSP RED CHILLI POWDER AND COOKED DAAL IN TADKA
  21. ADD 3 KOKUM( OR DRIED MANGO) 1 PIECE OF JAGGERY
  22. ADD SALT ,CORIANDER AND BOIL FOR 10 MIN TO ENHANCE SWEET AND SOUR TASTE
  23. GIVE SMOKY EFFECT TO DAAL BY PLACING HOTBURNED CHARCOAL PLACE IN A BOWL ON DAAL,ADD CAROMSEEDS ,GHEE
  24. HEAT THE BATI MAKER FOR 10 MIN..PLACE CHARCOAL IN MIDDLE LAYER
  25. ARRANGE ALL THE BATIS ON THE TOP OF GRILL STAND EVENLY AND CLOSE THE LID
  26. KEEP TURNING AFTER FEW MIN...AND ROAST UNTIL YOU SEE BROWN LAYER ON THE TOP OF BATIS
  27. ONCE ROASTED PROPERLY,REMOVE FROM FLAME,BREAK SLIGHTLY BETWEEN YOUR PALMS AND DIP IN DESI GHEE.
  28. ADD CASTOR SUGAR,CARDAMON POWDER AND MIX WELL..OUR BATI CHURMA IS READY
