ABOUT Dahibara aloo dum ghuguni RECIPE

Ingredients Serving: 4

  1. for Dahi Vada/dahibara-
  2. urad dal 1/2 cup
  3. rawa 2tbsp
  4. salt according to taste
  5. oil for deep frying
  6. For curd mixture -
  7. curd 1 cup (preferably sour curd)
  8. salt as per taste
  9. roasted cumin chili powder 1tbsp
  10. Grated ginger 1tsp
  11. for tempering-
  12. Oil 1tsp
  13. mustard seeds 1tsp
  14. dry red chilli 2
  15. curry leaves few
  16. for aloo dum -
  17. boiled potato 2-3
  18. bay leaf 1
  19. cumin seeds 1tsp
  20. chopped onion 1
  21. Chopped tomato 1
  22. dry red chilli 2
  23. turmeric powder 1/2 tsp
  24. red chilli powder 1tsp
  25. cumin powder 1tsp
  26. coriander powder 1tsp
  27. garam masala powder 1tsp
  28. chopped coriander leaves handful
  29. salt as per taste
  30. oil 1tbsp
  31. For ghuguni -
  32. dry yellow Peas 1/2cup
  33. cumin seeds 1 tsp
  34. ginger garlic paste 1 tsp
  35. Chopped onion 1
  36. Chopped tomato 1
  37. turmeric powder 1/2 tsp
  38. red chilli powder 1tsp
  39. cumin powder 1tsp
  40. coriander powder 1tsp
  41. Chana masala 1 tsp(optional)
  42. garam masala powder 1tsp
  43. chopped coriander leaves and full
  44. salt as per taste
  45. oil 1 tsp
  46. other ingredients-
  47. black salt 1 tsp
  48. roasted cumin-red chilli powder
  49. crispy sev 1/2cup
  50. finely chopped onion 1/2cup
  51. finely chopped coriander leaves handful
  52. toothpicks few (optional)

Instructions

  1. WASH AND SOAK URAD DAAL FOR 2-3HOURS.
  2. STRAIN AND GRIND TO A PASTE. ADD RAWA,SALT TO TASTE AND MIX WELL.
  3. MIX VIGOROUSLY TILL THE BATTER BECOMES FLUFFY.
  4. TO KNOW WHETHER THE BATTER IS PERFECT FOR BARA OR NOT,
  5. PUT A TINY AMOUNT OF BATTER IN A BOWL FULL OF WATER. IF IT FLOATS THEN BATTER IS PERFECT FOR BARA.
  6. TAKE CURD IN A BIG CONTAINER, ADD WATER, SALT, GRATED GINGER, ROASTED CUMIN-CHILLI POWDER.
  7. MIX WELL.
  8. TAKE LITTLE AMOUNT OF BATTER AND SHAPE IT.
  9. DEEP FRY IN MEDIUM HEAT OIL TILL CRISP AND GOLDEN BROWN FROM ALL SIDES.
  10. TAKE OUT AND PUT IN WARM WATER FOR 5-10MINS.
  11. SQUEEZE OUT THE EXCESS WATER AND PUT IN THE CURD MIXTURE.
  12. FOR TEMPERING - HEAT OIL IN A TADKA PAN. ADD MUSTARD SEEDS, DRY RED CHILLI AND CURRY LEAVES.
  13. COOL FOR FEW MINS AND ADD TO THE DAHIBARA MIXTURE.
  14. FOR ALOO DUM-HEAT OIL IN A PAN, ADD CUMIN SEEDS, BAYLEAF,
  15. CHOPPED ONIONS, DRY RED CHILLI, SAUTE A MIN.
  16. ADD GINGER GARLIC PASTE AND COOK TILL THE RAW SMELL GOES.
  17. ADD TOMATOES AND COOK FURTHER FEW MINS.
  18. ADD SALT AND ALL THE SPICES.
  19. MIX.
  20. WHEN OIL LEAVES THE PAN SIDES, ADD BOILED AND CHOPPED POTATOES.
  21. COOK FURTHER FEW MINS.
  22. ADD 1CUP WATER AND COOK TILL GRAVY THICKENS.
  23. FINALLY ADD GARAM MASALA POWDER, CHOPPED CORIANDER LEAVES AND SWITCH OFF.
  24. FOR GHUGUNI - SOAK WHITE PEAS OVERNIGHT AND BOIL WITH POTATO.
  25. HEAT OIL IN A KADHAI, ADD CUMIN SEEDS, CHOPPED ONION, SAUTE A MIN.
  26. ADD GINGER GARLIC PASTE AND COOK TILL RAW AROMA GOES.
  27. ADD TOMATOES, SALT AND ALL THE SPICES.
  28. COOK TILL OIL SEPARATES AND THEN ADD THE BOILED PEAS.
  29. MASH THE POTATO AND ADD.
  30. SAUTE A MIN.
  31. ADD 1-1/2CUP OF WATER, MIX WELL AND COOK FOR FEW MINS.
  32. FINALLY ADD CHOPPED CORIANDER LEAVES AND SWITCH OFF.
  33. PLACE 2-3 DAHIBARAS IN A PLATE ALONG WITH CURD MIXTURE.
  34. POUR 2-3TBSP GHUGUNI OVER IT FOLLOWED BY ALOO DUM.
  35. SPRINKLE FINELY CHOPPED ONIONS, CHOPPED CORIANDER LEAVES, CRISPY SEV.
  36. SPRINKLE KALA NAMAK AND CUMIN CHILLI POWDER.
  37. PUT TOOTHPICK AND SERVE.
