Ingredients Serving: 2

  1. 1/2 kg paraboiled potatoes cubed
  2. Salt to taste
  3. 2 cup olive oil for frying
  4. 1-2 teaspoon pepper
  5. For Mayonnaise mix
  6. 1/4 cup mayonnaise
  7. 1 teaspoon lemon juice
  8. 1 minced garlic
  9. For sauce
  10. 300g g tomatoes pureed
  11. 1/2 onion finely chopped
  12. 2 garlic cloves minced
  13. 1 tbsp olive oil
  14. 2 tbsp hot chili sauce
  15. 1/2 teaspoon red chilli flakes
  16. 1/4-1/2 teaspoon paprika
  17. Salt to taste
  18. 1 teaspoon wine/sherry / cider vinegar
  19. Water if required
  20. 1 tbsp parsley to garnish

Instructions

  1. HEAT 1 TBSP OLIVE OIL IN A PAN
  2. ADD ONIONS AND SAUTE UNTIL TRANSLUCENT
  3. ADD MINCED GARLIC AND SAUTE UNTIL AROMATIC
  4. ADD TOMATO PUREE AND COOK FOR 4-5 MINUTES
  5. ADD PAPRIKA AND RED CHILLI FLAKES. COOK FOR A MINUTE
  6. ADD SALT , VINEGAR , HOT CHILI SAUCE.MIX WELL. ADD WATER IF REQUIRED. IT SHOULD BE SAUCE CONSISTENCY
  7. COOL THE SAUCE
  8. BLEND TO SMOOTH SAUCE
  9. ADD SALT AND PEPPER TO CUBED POTATOES. TOSS WELL
  10. HEAT OLIVE OIL IN A PAN
  11. ADD PINCH OF SALT TO HOT OIL
  12. ADD POTATOES AND FRY UNTIL CRISP AND GOLDEN BROWN
  13. DRAIN EXCESS OIL ON TISSUE PAPER
  14. ADD MINCED GARLIC AND LEMON JUICE TO MAYONNAISE. MIX WELL
  15. ADD MAYONNAISE MIX AND SAUCE TO POTATOES. GARNISH WITH PARSLEY AND SERVE WARM
