Ingredients Serving: 2

  1. Kal dosas / Uthappas / nadan dosas 3
  2. Oil 3 tablespoons
  3. Cloves 3
  4. Green chilies as preferred
  5. Ginger garlic paste 3/4 teaspoon
  6. Onions medium sized 2 finely chopped
  7. Tomato big ripe 1 finely chopped
  8. Salt 1/2 teaspoon
  9. Turmeric powder 1/2 teaspoon
  10. Red chilly powder 1 teaspoon
  11. Coriander powder 3/4 teaspoon
  12. Garam masala powder 1 teaspoon
  13. Curry leaves 2 sprigs
  14. Cilantros for garnishing
  15. Water to sprinkle 1 ladle full

Instructions

  1. Heat 3 tablespoons oil in a pan . Add 3 cloves .
  2. Add green chillies as preferred .
  3. Add 2 sprigs curry leaves . Add 2 medium sized onions finely chopped . Sauté until translucent.
  4. Add 3/4 teaspoon ginger garlic paste . Sauté until raw smell leaves .
  5. Add 1 big ripe tomato chopped . Sauté until mushy and soft .
  6. Add 1/2 teaspoon turmeric powder , 1 teaspoon red chili powder , 3/4 teaspoon coriander powder .
  7. Add 1 teaspoon Garam Masala powder .
  8. Sauté until ingredients combine well .
  9. Sprinkle little water to moisten the masala . Add 1/2 teaspoon salt . Mix and cook for 30seconds.
  10. Meantime,Take 3 medium sized kal dosas / uthappams / nadan dosas . Preferably leftovers .
  11. Cut the dosas into bite sized pieces . Add them to the masala .
  12. Sprinkle little water to moisten the dosas so they combine well with masala .
  13. Mix , punch the dosa with a spatula for better masala absorption.Repeat till kothu looks rich in
  14. color. Garnish with chopped cilantros. Spicy Kothu dosa is ready . Serve hot .
