  1. Paneer 250 gm
  2. Chopped onion 1
  3. Chopped tomato 2
  4. Ginger 2 tsp
  5. Melon seeds 1 tbs
  6. Kaju 8-10
  7. Chopped garlic 1 tbs
  8. Chopped green chillies
  9. Black, green Cardamom 2-1
  10. Shahi jeera 1/2 tsp
  11. Coriander seeds 1 tsp
  12. Pepper corn 1/2 tsp
  13. Whole red chilli 1
  14. Desiccated coconut 3 tbs
  15. Till 2 tbs
  16. Jeera 1 tsp
  17. Cinnamon stick 2
  18. Turmeric 1/2 tsp
  19. Coriander powder 1 tsp
  20. Kashmiri red chilli powder 2 tsp
  21. Garam Masala 1/2 tsp
  22. Kasoori methi 1 tsp
  23. Chopped coriander leaves
  24. Oil 1/4 cup
  25. Ghee 1 tsp
  26. Water as required

Instructions

  1. DRY ROAST 2 TBSP SESAME SEEDS FOR 1 MINUTE, ADD 1 TBSP CORIANDER SEEDS, 1 TSP CUMIN SEEDS
  2. ADD 2 CINNAMON STICKS,1/2 TSP PEPPERCORNS, 4-5 CLOVES
  3. ADD 2 CRUSHED BLACK CARDAMOMS,1 GREEN CARDAMOM, ROAST FOR 2 MINS ON LOW HEAT
  4. ADD 3 TBSP DESICCATED COCONUT, ROAST FOR 1 MINUTE
  5. REMOVE & BLEND IN A MIXER JAR
  6. KOLHAPURI MASALA IS READY
  7. HEAT 1/2 CUP WATER, ADD 2 CHOPPED TOMATOES, 1 TBSP CHOPPED GINGER
  8. ADD 8-10 CASHEWS, 1 TBSP MELON SEEDS
  9. ADD 1 TSP GHEE, COVER & COOK FOR 10-15 MINS
  10. STRAIN, COOL & BLEND THE MASALA IN A MIXER JAR
  11. CURRY PASTE IS READY
  12. HEAT 1/4 CUP OIL, ADD 1/2 TSP SHAH ZEERA
  13. ADD 2 BAY LEAVES, 1 DRY RED CHILLI, SAUTE FOR 1 MINUTE
  14. ADD CHOPPED ONION, FRY UNTIL TRANSLUCENT
  15. ADD 1 TBSP CHOPPED GARLIC, 2 CHOPPED GREEN CHILLIES
  16. ADD 1/2 TSP TURMERIC POWDER, 1 TSP CORIANDER POWDER
  17. ADD 2 TSP RED CHILLI POWDER, 1/2 TSP GARAM MASALA POWDER, 2 TBSP WATER, MIX
  18. ADD THE READY CURRY PASTE, MIX WELL
  19. ADD THE READY KOLHAPURI MASALA, COOK FOR 3-4 MINS ON LOW HEAT
  20. ADD SALT, 1/2-3/4 CUP WATER SIMMER FOR 2 MINS
  21. ADD 250 GMS CUBED COTTAGE CHEESE, COVER & COOK FOR 3-4 MINS
  22. ADD 2 TSP KASOORI METHI & A HANDFUL OF CHOPPED CORIANDER LEAVES, MIX & SERVE HOT WITH ROTI OR RICE
