Ingredients Serving: 2

  1. 1 tablespoon olive oil
  2. 1 small capsicum, cut into thin strips
  3. 2 spring onions, finely chopped
  4. 3 ripe tomatoes diced
  5. 2 cups spinach, cleaned and Coarsely chopped
  6. 100 gms cottage cheese ( sliced into batons)
  7. Grated cheese, top
  8. Oregano 1/2 tsp
  9. Salt and pepper
  10. Cottage cheese can also be a pan fried a little, if desired

Instructions

  1. IN A LARGE PAN COOK THE MUSHROOM PAZZTA ACCORDING TO PACK INSTRUCTIONS.
  2. ADD TASTEMAKER
  3. BRING TO BOIL
  4. SIMMER FOR 5 MINS, STIR OCCASIONALLY. NOW KEEP ASIDE.
  5. IN A LARGE SKILLET HEAT 1 TBSP OLIVE OIL, ADD 1 THIN STRIP CAPSICUM, FINELY CHOPPED SPRING ONION.
  6. SOFTEN THE CAPSICUM AND SPRING ONIONS IN THE OLIVE OIL.
  7. SEASON WITH SALT, OREGANO AND 1/2 TSP PEPPER.
  8. MIX WELL.
  9. ADD 3 RIPE TOMATOES DICED, 2 CUPS SPINACH CHOPPED.
  10. CONTINUES COOKING TILL TOMATOES ARE SOFT
  11. COOKED TOMATOES.
  12. ADD 100 GMS PAN FRIED COTTAGE CHEESE BATONS
  13. ADD COOKED PASTA AND COMBINE WELL.
  14. AND HEAT THROUGH.
  15. ADJUST THE SEASONING JUST BEFORE SERVING. SPRINKLE WITH A LITTLE GRATED CHEESE.
  16. SERVE HOT!
