Lemon rice and all other mixed rice varieties are my favorite. I can eat without getting tired even every day for lunch. This is an easy recipe of Rice that can be prepared in minutes and taste amazing. Lemon rice is a great way to renovate the left over rice :) The lemon rice recipe has many different versions. I have used the typical South Indian way of preparing lemon rice. The key ingredients other then lemon in this lemon rice is curry leaves and mustard seeds. Normally in South India coconut is added in lemon rice preparation. But that is optional.

Ingredients Serving: 4

  1. Cooked rice - 1 1/2 cups (leftover rice)
  2. Oil - 3 tbsp
  3. Mustard seeds - 3/4 tbsp
  4. Urad dal - 1 tbsp
  5. Cumin seeds - 1 tbsp
  6. Chana dal - 1 tbsp
  7. Cashewnuts - 2 tbsp
  8. Peanuts - 2 tbsp
  9. Green chillies - 3
  10. Curry leaves - 2 sprigs
  11. Lemon juice - 4 tbsp
  12. Turmeric - 1/2 tbsp
  13. Salt as needed

Instructions

  1. LEFTOVER RICE
  2. HEAT A KADAI/PAN WITH OIL,ADD GREEN CHILLIES AND CURRY LEAVES TO SAUTE
  3. SAUTE FOR A MINUTE
  4. ADD MUSTARD SEEDS,URAD DAL,CHANA DAL
  5. ADD CUMIN SEEDS
  6. ADD PEANUTS
  7. ADD CASHEWNUTS
  8. FRY TILL GOLDEN
  9. ADD TURMERIC POWDER
  10. ADD SALT
  11. ADD LEMON JUICE
  12. MIX WELL
  13. ADD RICE
  14. MIX WELL.COOK ON.LOW HEAT TILL IT GETS HEATED THROUGH
