Ingredients Serving: 10

  1. Whole wheat flour 2 cups
  2. Luke warm water 1/4 cup
  3. Instant dry yeast 2 teaspoons
  4. sugar 1 teaspoon
  5. Salt 1 teaspoon or as preferred
  6. Luke Warm milk 1 cup or as required
  7. Vegetable Oil 4 tablespoons
  8. Butter / ghee for brushing as preferred
  9. White sesame seeds 1/4 cup
  10. Cilantros finely chopped 1/4 bunch
  11. Water for sprinkling 1/2 cup

Instructions

  1. Add 2 teaspoons instant dry yeast in 1/4 cup warm water .
  2. Add a teaspoon of sugar to the yeast mixture for better yeast activation .
  3. Mix all together and leave it aside until the mixture turns foamy .
  4. Take 2 cups whole wheat flour in a wide bowl . Add a teaspoon of salt to the flour .
  5. The foamy yeast mixture is ready .
  6. Pour the activated yeast mixture to the flour .
  7. Start kneading by combining the ingredients .
  8. Add required warm milk and knead into a super soft dough .
  9. Add 3 to 4 tablespoons vegetable oil .
  10. Punch and knead front and back for 5 minutes or until dough looks smooth and soft .
  11. Cover the dough and keep aside for an hour or until dough doubles in size .
  12. Doubled in size , proofed dough is ready .
  13. Knock the air out from the dough and knead again for another 5 minutes .
  14. Divide the dough into equal 12 portions .
  15. Take a portion of the dough . Sprinkle a teaspoon white sesame seeds, tablespoon cilantros .
  16. Roll into a medium thickness long roti . Make dents with finger tips in the Roti as shown .
  17. Heat a tawa . Place the roti . Sesame side up . Sprinkle water on top to ensure moistness .
  18. Cover and cook in low to medium for 2 minutes .
  19. The lower side is cooked while the upper side puffs up . Flip side , sprinkle water .
  20. Apply butter / ghee . Cover and cook until brown spots .
  21. Gently press in between for even cooking .
  22. Likewise cook the rest of the khameeri rotis .
  23. Soft Khameeri rotis are ready . Brush extra butter / ghee . Serve hot with any flavorful curry .
