This recipe is purely my idea . A perfect way to incorporate iron rich moringa leaves in children ‘s diet . A tasty appetizer / snack / tiffin. #earnwithbetterbutter

Ingredients Serving: 10

  1. Moringa leaves 2 cups
  2. White flattened rice / poha 1.5 cup washed thrice
  3. Onion medium sized 1 finely chopped
  4. Spring onion ‘s white bulb finely chopped 2 tablespoons
  5. Carrot finely chopped a fistful
  6. Cucumber finely chopped 1 tablespoon
  7. Potato large boiled and mashed 1
  8. Turmeric powder 1/4 teaspoon
  9. Red chilly powder 1 teaspoon
  10. Coriander powder 1/2 teaspoon
  11. Dry mango powder 3/4 teaspoon
  12. Salt as preferred
  13. water 1/4 to 1/2 cup
  14. rice Flour 2 to 3 tablespoons
  15. Cooking oil 6 tablespoons
  16. Grated ginger ( optional )

Instructions

  1. Take 2 cups cleaned moringa leaves .
  2. Add 1 medium sized onion finely chopped .
  3. Add 2 tablespoons finely chopped spring onion white bulb.
  4. Add a fistful of finely chopped carrot .
  5. Add 1 tablespoon finely chopped cucumber . Add any veggies.
  6. Add 1 large sized boiled and mashed potato .
  7. Wash 1.5 cups white flattened rice /poha . Drain excess water . Now add the Moist softened poha
  8. to the vegetable mixture . Add 1 teaspoon red chili powder , 1/2 teaspoon coriander powder ,
  9. Add 3/4 teaspoon dry mango powder .
  10. Add required salt .
  11. Add 1/4 teaspoon turmeric powder .
  12. Add 1/4 to 1/2 cup water gradually .
  13. Add 3 tablespoons rice flour .
  14. Mix all together to a moist batter . Shouldn’t be in pouring consistency .
  15. Heat 1 tablespoon cooking oil on a hot tawa .
  16. Take 1/2 ladle batter to the hot tawa and shape into a hashbrown.
  17. Smear a teaspoon of oil .
  18. Cover and cook in low to medium until the lower side looks brown and crunchy .
  19. Flip the side and cook without covering .
  20. These hashbrowns are delicate to handle so be gentle while flipping .
  21. Both the sides are cooked . Repeat the steps and cook in batches .
  22. Moringa Hashbrowns are ready . Serve hot with any dip/ sauce.
