Ingredients Serving: 8

  1. 500 gram mutton mince
  2. For Dry powder, 2 black cardamom
  3. 1 tsp caraway seeds
  4. 6 to 8 green cardamom
  5. 6 to 8 cloves
  6. 8 to 10 kabab chini
  7. 1 lace mace (javitri)
  8. 1/8 tsp nutmeg
  9. 3 star anise
  10. 1 inch cinnamon stick
  11. 2 stone flower
  12. 6 to 8 black pepper
  13. 1 tsp cumin seeds
  14. For Wet paste, 1 inch ginger chopped
  15. 10 to 12 garlic cloves
  16. 1 tbsp raw papaya cubes
  17. 1 tbsp lemon juice
  18. 1/2 cup brown onion
  19. 1 tbsp Charoli (Chironji)
  20. 10 to 12 cashew nuts
  21. 1 tbsp poppy seeds
  22. 12 to 15 dry rose petals
  23. 1 and 1/2 tbsp red chilli powder
  24. 3/4 tbsp or according to taste salt
  25. 1 tbsp saffron milk
  26. 1/4 cup chick pea flour
  27. 1 tsp rose water
  28. Few drops of kewra essence
  29. 1/2 cup cream
  30. Charcoal and foil for burn flavour
  31. 3/4 cup deai ghee
  32. Some lemon wedges,onion slice and fresh coriender for serve

Instructions

  1. TAKE 2 BLACK CARDAMOM IN A BLENDING JAR
  2. ADD 1 TSP FENNEL SEEDS
  3. 1 TSP CARAWAY SEEDS
  4. 6 TO 8 CLOVES
  5. 6 TO 8 GREEN CARDAMOM
  6. 8 TO 10 KABABCHINI
  7. 1 LACE MACE
  8. 1/8 PIECE OF NUTMEG AND 3 STAR ANISE
  9. 1 INCH STICK CINNAMON AND 2 STON FLOWER
  10. ADD 6 TO 8 BLACK PEPPER AND 1 TAP CUMIN SEEDS
  11. DRY GRIND IT
  12. MAKE POWDER OF IT AND KEEP ASIDE FOR NEXT STEP
  13. NOW TAKE 1 INCH GINGER AND 10 TO 12 GARLIC CLOVES
  14. 10 TO 12 RAW PAPAYA CUBES
  15. ADD 1 TBSP LEMON JUICE AND BLEND IT
  16. AND MAKE FINE PASTE OF IT AND KEEP ASIDE THIS FOR NEXT STEP
  17. NOW TAKE 1/2 CUP ALREADY BROWN ONION
  18. 1 TBSP CHAROLI AND 10 TO 12 CASHEW NUTS
  19. ADD 1 TBSP POPPY SEEDS AND 12 TO 15 DRY ROSE PETALS
  20. ADD LITTLE AMOUNT OF WATER AND GRIND IT
  21. NOW TAKE 500 GRAM MUTTON MINCE IN MIXING BOWL AND ADD ALL DRY GRIND MASALA
  22. ADD RAW PAPAYA, GINGER AND GARLIC PASTE
  23. ADD ROSE PETALS AND BROWN ONION PASTE
  24. ADD 1 TSP ROSE WATER AND FEW DROPS OF KEWRA ESSENCE
  25. ADD MILK DISSOLVE SAFFRON AND 1/4 CUP CHICK PEA FLOUR
  26. ADD 1 AND 1/2 TBSP RED CHILLI POWDER AND 3/4 TBSP SALT OR ACCORDING TO TASTE AND MIX
  27. NOW ADD 1/2 CUP CREAM AND MIX NICELY AND MAKE WELL IN CENTRE
  28. PLACE BOWL OF FOIL IN CENTRE AND KEEP BURN CHARCOAL AND POUR 1 TBSP DESI GHEE AND IMMEDIATELY COVER
  29. COVER ALL SIDES NICELY AND LEFT IT FOR 1 HOUR FOR INHANCE TASTE AND SMELL
  30. AFTER 1 HOUR LEFT OUT THE CHARCOAL BOWL
  31. AND MIX WELL
  32. RUB SOME WATER ON PALM,TAKE SMALL BATCH OF MIXTURE AND GIVE KABAB SHAPE
  33. HEAT GHEE ON TAWA AND LEFT THIS KABAB IN THIS FOR SHALLOW FRY IT
  34. MAKE ALL KABAB LIKE THIS
  35. POUR SOME DESI GHEE OVER THE TOP
  36. WHEN ONE SIDE DONE FLIP IT TO COOK OTHER SIDE
  37. WHEN DONE LEFT IT OUT FROM TAWA AND MAKE ALL KABAB LIKE THIS
