ABOUT Rajasthani Korma Roti RECIPE

A rajasthani delicacy, korma roti is parathas made up of spiced up whole wheat flour and ground lentils dough. It makes a good travel food too.

Ingredients Serving: 4

  1. Dhuli moong dal 1/2 cup
  2. Whole wheat flour 1 cup
  3. Green coriander leaves 2 tbsp
  4. Ginger paste 1 tbsp
  5. Green chilies 2
  6. Salt 1 tesp
  7. Red chilli powder 1/2 tesp
  8. Turmeric powder 1/4 tesp
  9. Carrom seeds 1/4 tesp
  10. Oil 2 tbsp + for frying

Instructions

  1. ADD 1/2 CUP DHULI MOONG DAL IN A MIXER JAR
  2. GRIND TO MAKE A COARSE POWDER ( APPROX 5 SECONDS), SOAK IN WATER FOR 3 HOURS
  3. DRAIN THE WATER, ADD 1 CUP WHOLE WHEAT FLOUR TO THE DAL
  4. ADD 2 TBSP CHOPPED FRESH CORIANDER, 1 TBSP GINGER PASTE, 2 CHOPPED GREEN CHILIES
  5. ADD 1 TSP SALT, 1/2 TSP RED CHILLI POWDER, 1/4 TSP TURMERIC POWDER
  6. ADD 1/4 TSP CAROM SEEDS, 2 TBSP OIL, MIX
  7. KNEAD INTO A DOUGH USING WATER AS REQUIRED
  8. SET ASIDE TO REST THE FOR 20 MINS
  9. DIVIDE THE DOUGH INTO 8 SMALL BALLS, DUST WITH DRY FLOUR, ROLL OUT ROUNDS
  10. GRILL ON A HOT, OIL-GREASED TAVA
  11. FLIP & GRILL ON BOTH SIDES FOR 1 MINUTE
  12. SPREAD SOME OIL, GRILL TILL GOLDEN BROWN ON BOTH SIDES
  13. SERVE HOT WITH CURD & GREEN CHUTNEY
