Ingredients Serving: 6

  1. For Hummus:
  2. Dried green chickpeas -1 cup, soaked overnight and boiled
  3. White sesame seeds -1/2 cup, roasted
  4. garlic - 2, large cloves, chopped
  5. Fresh coriander leaves - 1/2 cup, chopped
  6. olive - 2 tbsp + 1 tsp (for garnishing)
  7. lemon juice - 2 tbsp
  8. Roasted cumin powder - 1/2 tsp
  9. Black pepper powder- 1/2 tsp
  10. salt to taste
  11. Red chilly powder - few pinches for garnishing
  12. For Falafel:
  13. Dried green chickpeas - 1 cup, soaked overnight and boiled
  14. onion - 1 large, roughly chopped
  15. Garlic- 2 , large cloves, chopped
  16. Fresh coriander leaves - 1 cup, chopped
  17. chickpea flour - 2 tbsp
  18. Roasted cumin powder - 1 tsp
  19. Roasted coriander powder - 1 tsp
  20. Black pepper powder - 1 tsp
  21. Red chilly powder - 1 tsp
  22. White sesame seeds - 1/2 tbsp, to coat
  23. oil to deep fry

Instructions

  1. GRIND WHITE SESAME SEEDS, OLIVE OIL TO FINE PASTE
  2. ADD ROUGHLY CHOPPED GARLIC
  3. ADD ROASTED CUMIN POWDER
  4. ADD BLACK PEPPER POWDER
  5. ADD SALT TO TASTE
  6. ADD LEMON JUICE
  7. ADD BOILED GREEN CHICKPEAS, PULSE 2-3 TIMES
  8. ADD CHOPPED FRESH CORIANDER LEAVES
  9. ADJUST WATER, GRIND TO A FINE PASTE
  10. TAKE BOILED GREEN CHICKPEAS IN MIXER JAR
  11. ADD CHOPPED ONION, GARLIC
  12. ADD CHOPPED FRESH CORIANDER LEAVES
  13. ADD ROASTED CUMIN POWDER
  14. ADD ROASTED CORIANDER POWDER
  15. ADD BLACK PEPPER POWDER
  16. ADD RED CHILLY POWDER
  17. ADD SALT TO TASTE
  18. ADD CHICKPEA FLOUR, GRIND INTO COARSE DOUGH
  19. SHAPE THEM, ROLL IN SESAME SEEDS
  20. DEEP FRY TILL GOLDEN IN COLOUR
