ABOUT Protein rich siddu(himachali style) RECIPE

This siddu is made of protein powerhouse walnut and almonds.They are very healthy as they are steamed,loved by all age group,keeps body warm during winters.

Ingredients Serving: 5

  1. Wheat flour/super fine flour (locally called so)
  2. Dry yeast-1 tsp
  3. Pinch of sugar and salt
  4. Lukewarm water -1.5cup
  5. oil for brushing
  6. For filling:Almonds -1/2 cup
  7. Walnut-1/2 cup
  8. Green chillies-2
  9. ginger -2 tsp grated
  10. jeera powder-1 tsp
  11. Corriander powder-1 tsp
  12. salt as per taste
  13. Corriander leaves-2-3 tsp

Instructions

  1. TAKE HALF KG SUPER FINE FLOUR/ WHEAT FLOUR,SEIVE IT .
  2. TAKE 1.5 CUP LUKEWARM WATER TO IT ADD ONE TSP DRY YEAST,PINCH OF SALT AND SUGAR.
  3. AFTER 2MINUTES KNEAD A SOFT DOUGH WITH THIS WATER.ADD WATER IN BATCHES,KNEAD SOFT DOUGH.
  4. ADD THAT MUCH WATER THAT IS NEEDED TO KNEAD,REST YOU CAN LEAVE.
  5. BRUSH OIL ON TOP.
  6. LEAVE THE DOUGH COVERED WITH LID IN WARM PLACE FOR 2-3 HRS.
  7. FOR FILLING I HAVE TAKEN HALF CUP WALNUT AND HALF CUP ALMOND.SOAK IT IN WATER FOR 5 HOURS.
  8. NOW REMOVE WATER,ADD 2 GREEN CHILLIES, GINGER AND MAKE PASTE OF IT .
  9. GRATED GINGER
  10. OF THIS CONSISTENCY
  11. ADD 1TSP CORRIANDER POWDER .
  12. ADD 1 TSP JEERA POWDER, GREEN CORRIANDER LEAVES.
  13. ADD SALT AS PER TASTE ,DON'T ADD TOO MUCH,I ADDED APPROX. 1TSP OR SLIGHTLY LESS THAN THAT ,MIX WELL.
  14. AFTER 3 HRS ,TAKE THIS MUCH PORTION OF DOUGH ,WITH THE HELP OF HANDS ROLL IT IN ROUND ROTI.
  15. PRESS IT AT CENTRE AND SIDES TO MAKE IT EXPAND.
  16. NOW TAKE ONE TSP OF BATTER AND SPREAD IT .
  17. FOLD IT FROM SIDES LIKE THIS WAY.
  18. NOW TAKE SIDES OUT BY PRESSING AND FOLD SIDES LIKE THIS WAY.
  19. MAKE ALL .MEANWHILE HEAT THE WATER IN STEAMER.
  20. PLACE THEM IN STEAMER KEEP SPACE IN BETWEEN AS THEY WILL EXPAND .NOW COOK AT HIGH FLAME FOR 35 MIN.
  21. AFTER 35-40 MINUTES .SERVE THEM WITH CLARRIFIED BUTTER/GHEE ,KETCHUP ,SWEET CHILLI SAUCE.
