ABOUT Prawn Maqlooba RECIPE

A traditional Saudi delicacy which is served during weddings and ceremonies . Maqlooba , in Arabic means upside down . Maqlooba is a upside down rice cake carrying all the goodness of prawns , veggies and the finest flavours of spices used . #earnwithbetterbutter

Ingredients Serving: 3

  1. For marination:
  2. Prawn cleaned , deveined 1/2 kg
  3. lemon juice 1 tablespoon
  4. salt 3/4 teaspoon
  5. Paprika powder 1/2 tablespoon
  6. garlic crushed finely 1 tablespoon
  7. For Arabic spice powder ( Dry roasting ingredients ) :
  8. cinnamon small stick 3
  9. Dried red chillies long 4
  10. Black whole pepper 9
  11. nutmeg 1 teaspoon
  12. coriander seeds 1 Tablespoon
  13. Green cardamom 4
  14. Stone flower large 2
  15. For the prawn head broth :
  16. Prawn heads 10
  17. water 4 cups
  18. turmeric powder 1 teaspoon
  19. Crushed garlic 1.5 tablespoons
  20. For frying :
  21. potato 1 medium thinly sliced
  22. salt a big pinch for potato
  23. carrot 1 medium sliced
  24. Green Bellpepper medium 1 cut into long pieces .
  25. oil 4 tablespoons
  26. ghee 4 tablespoons
  27. Marinated prawns
  28. For prawn broth rice :
  29. Basmati rice washed , soaked for 20 minutes
  30. oil 4 tablespoons
  31. Star anise 2 large
  32. cloves 7 to 9
  33. onion medium sized 1 sliced
  34. tomatoes big 3 red and ripe puréed into a thick purée
  35. salt 3 teaspoons or as preferred
  36. ghee 1 tablespoon
  37. Filtered prawn broth 2.5 cups
  38. cilantros chopped for garnishing

Instructions

  1. In low , Dry roast 4 dried red chillies, 1 tablespoon coriander seeds,nutmeg 1 teaspoon,stoneflower
  2. 2,cardamom4,Cinnamon 3 small, 9 black pepper .Cool and grind to a smooth powder . Keep aside .
  3. Marinate 1/2kg prawns in 1 tablespoon fresh lime juice ,
  4. 1 tablespoon crushed garlic ,
  5. 3/4 teaspoon salt .
  6. Add 1/2 tablespoon paprika powder .
  7. Mix all together and marinate for 15 minutes .
  8. Boil 4 cups water in a wok . Add the cleaned prawn heads , 1.5 tablespoons crushed garlic .
  9. Add a teaspoon of turmeric powder .
  10. Cover and boil prawn heads for 15 minutes until aromatic broth is ready .
  11. Meantime , heat 4 tablespoons oil , 4 tablespoons ghee in a pan . Slice 1 medium sized potato .
  12. Drop the potato slices in the hot ghee oil and fry both sides until golden and crisp.
  13. Add a big pinch of salt while potatoes are getting fried .
  14. Remove the fried golden slices . Slice 1 medium carrot . Fry them in the same oil until crunchy .
  15. By now , aromatic prawns head broth is ready . Switch off the heat .
  16. Take out the fried carrots and keep aside .
  17. Next add 1 medium sized green bell pepper that is cut into long pieces . Fry until crunchy . ty
  18. Next fry the marinated prawns in low heat until golden brown .
  19. In between , strain the prawn head broth . Measure 2.5 cups broth for 3 cups Basmati rice . Keep .
  20. Heat 4 tablespoons oil in a wide pan . Add 2 large star anise , 1 medium sized onion sliced. Sauté
  21. until pink . Add in 7 cloves and toss in the oil .
  22. Pour the fresh tomato purée . Used 3 big ripe tomatoes for the purée . Cook in high for 3 minutes .
  23. Add the powdered spice powder .
  24. Add 3 teaspoons / required salt .
  25. When purée reaches a thick saucy state , add in the drained basmati rice . 3 cups rice used.
  26. Toss gently and allow to roast for 3 minutes in low heat . Smear tablespoon ghee .
  27. After roasting the rice gently , now pour the measured hot prawn head broth .
  28. Simmer the flame . Give a gentle mix thoroughly . Cover the pan tightly and slow cook for 12 mins.
  29. After 12 minutes , remove the lid . Our rice is cooked . Leave it open .
  30. The other hand , take a cake tin / a round container . Arrange all the fried veggies as first layer
  31. Then insert few fried prawns here and there . Sprinkle chopped cilantros .
  32. Add the remaining fried prawns to the cooked rice . Toss the rice gently .
  33. Now fill the cake tin with the prepared prawn rice . Spread rice on top of the arranged ingredients
  34. Press , level the surface of the tightly packed hot rice . Cover and keep for 5 minutes .
  35. Then tilt the tin on a plate . Be gentle .
  36. Pull up the tin and there you could see our upside down Arabic rice is ready .
  37. Prawn Maqlooba , a delicacy from Saudi is ready .
  38. Serve hot .
