  2. Color orange (optional) small pinch
  3. Kewra water 1/2tsp
  4. Crushed mint 1tsp
  5. Salt as needed
  6. Mix pulses 1/2cup :
  7. Butter beans
  8. Kidney beans
  9. Cow peas white
  10. Rice 1cup
  11. Rajma
  12. Green moong dal
  13. Soya bean
  14. Lobia seeds
  15. black kabuli channa
  16. Lima Beans big
  17. Paneer fried 1/4cup optional
  18. Garam masala whole:
  19. Clove 2
  20. Cinnamon 1stick
  21. Green cardamom 2
  22. Black cardamom 2
  23. For white and brown paste :
  24. Ginger 1tsp
  25. Cashew 4
  26. Fried onion 1big onion
  27. Curd 2tbsp
  28. Green chilli 4
  29. Garlic 1.5tsp
  30. For rice :
  31. Water 1.5L for boiling
  32. Ghee 1/2tsp
  33. Salt 3/4tsp
  34. Kesar 1drop

Instructions

  1. SOAK DAL OVERNIGHT AND THE BASMATI RICE NOT MORE THAN HALF AN HOUR
  2. PRESSURE COOK DAL WITH SALT AND ENOUGH WATER (APPROX 1.5 CUPS) FOR 3WHISTLES IN MEDIUM FLAME
  3. USE FRESH WATER INSTEAD THE WATER USED FOR SOAKING
  4. ONCE DONE WASH IT IN COLD RUNNING WATER , STRAIN IT AND SET ASIDE
  5. GRIND GINGER GARLIC GREENCHILLI WITH CURD INTO A SMOOTH PASTE
  6. FRY THINLY SLICED ONIONS TO BROWN IN MEDIUM FLAME
  7. STRAIN EXCESS OIL IN A TISSUE PAPER
  8. GRIND HALF OF FRIED ONION ALONG WITH CASHEW AND WATER TO A PASTE
  9. NOW FOR COOKING RICE BOIL 2L WATER ADD GHEE AND SALT
  10. ADD A DROP OF KESAR EXTRACT OR ONE PINCH OF SAFFRON THREADS
  11. ONCE RICE TO THE BOILING WATER
  12. COOK TILL IT IS 80 PERCENT DONE
  13. THEN STRAIN THE EXCESS WATER AND PUT THE RICE ON A PLATE AND FLUFF IT WITH FORK TO GET WARM
  14. ADD GHEE IN A KADAI
  15. ADD THE WHOLE GARAM MASALA
  16. LET IT SPLUTTER AND RELEASE FLAVOR
  17. NOW ADD THE GINGER GARLIC CHILLI PASTE
  18. SAUTE TILL OIL SEPARATES
  19. NOW ADD THE BROWN ONION PASTE
  20. ADD FRESH OR DRY MINT,COOK WELL TILL OIL STARTS TO RELEASE
  21. NOW ADD THE COOKED PULSES AND GRAIN
  22. COOK WELL FOR 5MINUTES AND OIL STARTS TO APPEAR ON TOP
  23. NOW SWITCH OFF STOVE AND SPREAD THE RICE EVENLY
  24. ADD REMAINING FRIED ONION
  25. ADD KEWRA WATER AND COLOR (OPTIONAL) AND MIX WELL
  26. MAKE THREE HOLES IN THE RICE WITH BACK OF LADLE AND POUR THE KEWRA WATER IN IT
  27. SEAL IT TIGHTLY,SWITCH ON STOVE AND LET IT COOK IN HIGH FLAME FOR 2MIN AND IN MEDIUM FLAME FOR 15MIN
  28. THEN FLUFF AND MIX THE RICE WITH A FORK. SERVE IT HOT WITH YOUR FAVOURITE GRAVY OR SALAN
