Dhokla is gujarati dish,can be made in many differrent ways.This dhokla is mixture of rice and gram flour,steamed and then khatta meetha water syrup is poured on top of it.taste is awesome ,can have it in breakfast or as evening snack.

Ingredients Serving: 5

  1. Gram flour/besan -1 cup
  2. Rice flour -1 cup
  3. Semolina/suji-4 tsp
  4. Curd -1/2 cup
  5. Grated ginger -1 tsp
  6. Green chilli -5
  7. Salt -1 tsp
  8. Sugar 4-5 tsp
  9. Juice of one lemon.
  10. Water 1.5 cup
  11. Oil 1 tbsp+ for greasing the tin.
  12. White vinegar 1 tsp
  13. Fruit salt-1 tsp/eno-1 satche
  14. Curry leaves-5-6
  15. Black mustard seeds -2 tsp
  16. Dessicated coconut-2 tsp
  17. Coriander leaves -2 tsp

Instructions

  1. GRAM FLOUR/BESAN- 1 CUP, RICE FLOUR-1CUP , CURD 1/2 CUP. TAKE ONE CUP FOR ALL MEASUREMENTS.
  2. SUGAR -2 TSP, SALT-1/2 TSP, TURMERIC POWDER- 1/2 TSP,PINCH OF HING/ASAFOETIDA.
  3. CHOPPED GREEN CHILLI -2,GINGER GRATED 1 TSP.
  4. SEMOLINA/SUJI -4 TSP.
  5. PUT BESAN/GRAM FLOUR IN BOWL.
  6. ADD RICE FLOUR.
  7. ADD SEMOLINA/SUJI TO IT.
  8. ADD SALT,SUGAR,TURMERIC,ASAFOETIDA TO IT.
  9. MIX WELL THEN ADD CURD TO IT.
  10. NEXT ADD WATER 1.5 CUP IN BATCHES AND KEEP ON MIXING.
  11. ADD WATER IN BATCHES AND KEEP ON MIXING.MAKE SURE NO LUMPS ARE FORMED.
  12. MIX IN ONE DIRECTION ONLY FOR 2-3 MINUTES.
  13. WE NEED THIS CONSISTENCY ,RIBBON LIKE.ADD GREEN CHILLI TO IT.
  14. NOW ADD GINGER.
  15. ADD 1 TSP WHITE VINEGAR TO BATTER.
  16. ALSO ADD 1 SATCHE ENO OR 1 TSP FRUIT SALT TO BATTER.
  17. GREASE THE TIN WITH OIL FROM ALL SIDES.
  18. POUR THE BATTER IN IT.
  19. TAP IT ,SO THAT IT IS EQUALLY DISTRIBUTED.
  20. KEEP IT IN STEAMER AND COOK IT FOR 20-25 MINUTES.
  21. FOR TADKA :1 TBSP OIL, SUGAR 3-4 TSP,SALT -1/2 TSP,BLACK MUSTARD SEEDS-2 TSP,GREEN CHILLI 3.
  22. CURRY LEAVES 5-6,LEMON-1,DESICCATED COCONUT 2TSP FOR GARNISHING.
  23. ADD OIL IN PAN HEAT IT.
  24. ADD MUSTARD SEEDS,GREEN CHILLIES SLICED TO IT.
  25. SAUTE IT FOR A MINUTE.
  26. ADD 1 CUP(200 ML) WATER TO IT.
  27. ADD SALT AND SUGAR TO IT.
  28. ADD JUICE OF LEMON, CAN ADJUST IT , SUGAR ,SALT AS PER TASTE. BRING IT TO BOIL OR BOIL FOR 1 MINUTE
  29. NOW AFTER 25 MINUTE ,LET IT COOL FOR 5 MINUTE. THEN FROM SIDES WITH THE HELP OF KNIFE TAKE IT OUT.
  30. FLIP IT ON A PLATE,IT IS SOFT AND SPONGY.
  31. CUT IT IN DESIRED SHAPE WITH KNIFE.
  32. CUT IN SQUARE SHAPE OR ANY SHAPE YOU LIKE.
  33. NOW POUR TADKA ON IT.BOTH TADKA AND DHOKLA SHOULD BE WARM, THEN ONLY IT WILL ABSORB THE JUICE.
  34. POUR IT ALL OVER.
  35. GARNISH WITH DESSICATED COCONUT.
  36. LIKE THIS ,CAN ADD ROASTED SESSAME SEEDS TOO. (OPTIONAL)
  37. NEXT CHOPPED CORIANDER LEAVES.
  38. READY TO SERVE.
  39. ENJOY.
