ABOUT Besan Pitla RECIPE

Besan Flour Pitla is an easy , quick to prepare side dish that goes well with rotis / pooris .

Ingredients Serving: 3

  1. Besan / Garbanzo flour 1 cup
  2. Water 1/2 cup or required to form a paste
  3. Cooking oil 2 Tablespoons
  4. Cumin seeds 1 teaspoon
  5. Garlic cloves 3 finely chopped
  6. Green Chillies 2 or as preferred
  7. Curry leaves a sprig
  8. Onion medium sized 2 finely chopped
  9. Salt as per taste or 1 + 3/4 teaspoon
  10. Turmeric powder 1/4 teaspoon
  11. Water a glass or required

Instructions

  1. Take 1 cup Besan flour in a bowl .
  2. Add required water gradually to the Besan flour . Mix until you get a smooth Besan paste .
  3. Whisk to a smooth paste . Shouldn’t be too tight nor runny .
  4. Besan paste is ready . Keep aside .
  5. Heat 2 tablespoons oil in a pan .
  6. Add a teaspoon cumin seeds and allow to crackle .
  7. Add 3 garlic cloves finely chopped .
  8. Add 2 green chillies . Add extra chillies if preferred .
  9. Add a sprig of curry leaves .
  10. Sauté all until garlic turns golden brown .
  11. Add 2 medium sized onions finely chopped . Sauté until light brown.
  12. Add 1/4 teaspoon turmeric powder. Mix .
  13. Add required salt . Mix .
  14. Add the prepared Besan flour paste . Maintain a low to medium flame .
  15. Stir continuously to avoid Besan sticking to the pan . At one point , Besan starts firming .
  16. Add a glass of water/required water to adjust the consistency of a Pitla.Dip consistency preferred.
  17. Mix completely and allow to boil for 5 minutes or until rawness of the flour leaves .
  18. Healthy , quick , Besan Pitla is ready. Serve with rotis .
