All purpose flour 2 cup
Salt 1 tsp
Oil 1 tbs
Sugar 1 tsp
Liquid milk as needed
Gram flour paste:
Gram flour 1 cup
Red food colour 1/2 tsp
Salt 1/2 tsp
Egg 1
Water as needed
Red chilli powder 2 tsp
For topping
Fennel seeds
Nigella seeds ,
Chopped green chilli, .
Coriander seeds
Sufficient oil for frying.
Instructions
TAKE 2 CUPS OF ALL PURPOSE FLOUR, ADD 1 TSP
SUGAR
ADD 1 TSP SALT, 1/2 TBSP OIL, MIX
KNEAD INTO A DOUGH, ADDING MILK AS
REQUIRED
GREASE WITH OIL, SET ASIDE TO REST FOR 20 MINS
TAKE 1 CUP GRAM FLOUR, 1/2 TSP EACH OF RED
FOOD COLOUR & SALT
ADD 2 TSP RED CHILLI POWDER, 1 EGG, MIX
ADD A LITTLE WATER TO MAKE A THICK PASTE
MAKE A MEDIUM CONSISTENCY BATTER LIKE THIS
SPREAD OUT THE RESTED DOUGH ON A FLAT
SURFACE
DIVIDE INTO 4-5 PORTIONS
SHAPE INTO ROUNDS, SPRINKLE FLOUR ON THE
WORK-TOP
ROLL OUT THIN ROTIS
SPREAD 2 TSP GRAM FLOUR PASTE ON EACH ROTI
SPRINKLE 1/2 TSP EACH OF CHOPPED GREEN
CHILLIES & FENNEL SEEDS ON TOP
ADD 1/2 TSP EACH OF NIGELLA & CORIANDER
SEEDS
PRESS DOWN LIGHTLY
THE QUATLAMA IS READY TO FRY
DEEP FRY IN SUFFICIENT OIL ON HIGH HEAT
FLIP & FRY BOTH SIDES
TURN OVER ONCE MORE
AND IT'S DONE, TAKE OFF HEAT, DRAIN OFF
EXCESS OIL
SERVE WITH SALAD, CHUTNEY / SAUCE
