Quatlama is a fabulous festival bread usually made in festive season.its soft and crunchy texture is really amazing.this aromatic bread is superb with chautny, sauce, chicken/mutton or salad.

Ingredients Serving: 3

  1. All purpose flour 2 cup
  2. salt 1 tsp
  3. oil 1 tbs
  4. sugar 1 tsp
  5. Liquid milk as needed
  6. Gram flour paste:
  7. Gram flour 1 cup
  8. Red food colour 1/2 tsp
  9. salt 1/2 tsp
  10. egg 1
  11. water as needed
  12. Red chilli powder 2 tsp
  13. For topping
  14. Fennel seeds
  15. Nigella seeds ,
  16. Chopped green chilli, .
  17. coriander seeds
  18. Sufficient oil for frying.

Instructions

  1. TAKE 2 CUPS OF ALL PURPOSE FLOUR, ADD 1 TSP SUGAR
  2. ADD 1 TSP SALT, 1/2 TBSP OIL, MIX
  3. KNEAD INTO A DOUGH, ADDING MILK AS REQUIRED
  4. GREASE WITH OIL, SET ASIDE TO REST FOR 20 MINS
  5. TAKE 1 CUP GRAM FLOUR, 1/2 TSP EACH OF RED FOOD COLOUR & SALT
  6. ADD 2 TSP RED CHILLI POWDER, 1 EGG, MIX
  7. ADD A LITTLE WATER TO MAKE A THICK PASTE
  8. MAKE A MEDIUM CONSISTENCY BATTER LIKE THIS
  9. SPREAD OUT THE RESTED DOUGH ON A FLAT SURFACE
  10. DIVIDE INTO 4-5 PORTIONS
  11. SHAPE INTO ROUNDS, SPRINKLE FLOUR ON THE WORK-TOP
  12. ROLL OUT THIN ROTIS
  13. SPREAD 2 TSP GRAM FLOUR PASTE ON EACH ROTI
  14. SPRINKLE 1/2 TSP EACH OF CHOPPED GREEN CHILLIES & FENNEL SEEDS ON TOP
  15. ADD 1/2 TSP EACH OF NIGELLA & CORIANDER SEEDS
  16. PRESS DOWN LIGHTLY
  17. THE QUATLAMA IS READY TO FRY
  18. DEEP FRY IN SUFFICIENT OIL ON HIGH HEAT
  19. FLIP & FRY BOTH SIDES
  20. TURN OVER ONCE MORE
  21. AND IT'S DONE, TAKE OFF HEAT, DRAIN OFF EXCESS OIL
  22. SERVE WITH SALAD, CHUTNEY / SAUCE
  23. TRY IT, IT'S YUM
